Italian Taco Salad
We make something similar. We brown chicken, then shred it and mix with taco seasoning. Then in a bowl, layer lettuce, black beans, grated Mexi cheese (not too much), the warm seasoned chicken, chopped red onions and crushed tortilla chips. For dressing, try the Hidden Valley spicy ranch dressing - fabulous!

Carrot Pineapple Cake I
My husband LOVED this cake. Really good. I do think it would be improved by the addition of some golden raisins, just needed that little extra, and double the frosting. Make sure cake completely cool before frosting, because it is so moist, it will crumble. Yum yum yum, thanks!

Slow Cooker Beef Stroganoff II
This was good, but modified like everyone else. First, cooking on HIGH for 8 hours made the meat fall apart too much, I'll try on LOW for 8 hours next time. Also subbed beef stock instead of water. Very good.
