For what they are, an austere pioneer food, they are good - especially with additional butter and syrup (only pure NY maple syrup will do). However, there is a reason why this has been replaced by other cornbread variations as other ingredients and cooking methods are available now. On a hot day with no A/C I wanted to try a cornbread that did not require an oven.

Strawberry Trifle

I made this for a get-together with another family. It was easy to make and tasted delicious. I used fresh berries because I had some in the fridge already. I would try this with blueberries and/or raspberries too.

Nana Dot's Irish Soda Bread

This had a wonderful texture and the kids loved it. I did not have currants or caraway seeds,but for our purposes I think that just raisins was perfect. I think this bread would have been great even without the raisins. It wasn't as powdery as some other soda bread recipes are.

French Beef Stew

I made this for dinner tonight. It was easy to make and tasted fantastic. The kids loved it - even my veggie skeptic. Following other suggestions I added two ribs of celery and 1/2 a red onion. I will definitely make this again.

Brooke's Best Bombshell Brownies

I had never made brownies from scratch before, but I was out of brownie mix and tried these. They are quick to assemble but are a grainier texture due to all of the white sugar - definitely not for those who like cake-like brownies.

My Best Clam Chowder

This was my first attempt at clam chowder and I was pleased with this recipe overall. Because we had bacon for breakfast, I followed the advice of some and sauteed my veggies in bacon grease before adding all of the clam juice to cook the veggies. I thought this thickened too much, so next time I would use only 1/2 cup of flour. I would also add at least one more can of clams.

I followed the microwave directions, which were great for regular rice crispy treats. But this was way too sticky, even warm with well-buttered hands, to form into anything so I put it into a pan.

Pumpkin Bars III

These were delicious. Definitely a cake-like consistency. The maple and powdered sugar glaze is well-worth making also. I forgot to add the raisins until it was in the oven. I'm sure that they would have made it even better. I just remembered, I did use 1/2 brown sugar and half whole wheat flour.9

I made this a couple of times. It came out best - totally awsome - with cheddar cheese soup instead of the cream soup. I layered it just like the directions said. No left-overs left.

Moroccan Tagine

This was not the best Moroccan recipe I have ever tried. It was not very spicy or flavorful. I added cinnamon and it was a lot better. If you like a chicken and vegetable stew with mild flavor, this might be to your liking. Of course, this must be served over cous-cous for the full effect and satiety.

Asian Roll Lettuce Wrap

We loved this. It is little bit like taco night. To accomodae my son, who doesn't like rice, I also made Ramen noodles. I must admit that I liked the Ramen noodles better than the rice, though they are less healthy. The dipping sauce was awsome. Don't try his recipe substituting powdered garlic and powdered ginger - it won't have nearly the taste.

Arroz con Pollo II

We liked this recipe and I will add it to our rotation. Like others I added additional water (1.5 cups) to help the rice cook. Also, I did't have saffron. Not sure if I can get it in these parts. This makes for a good weeknight meal.

Incredibly Cheesy Turkey Meatloaf

I had really high hopes for this recipe, but prepared per this recipe it took almost 2 hours to cook to a safe internal temperature in a standard loaf pan and made a big mess even with a drip pan. The taste was O.K. but not worth all of the scrubbing I will have to do, not to mention that we did not even end up eating it for dinner tonight because it took twice as long to cook as I had planned. To salvage it I scraped off the burnt top and used part of it for a casserole. I'm not sure what will be done with the other half. I hate to waste so much meat.

Easy Chicken Korma

This was delicious. My children, ages three and seven asked for seconds. It was easy to make and will definitely go into rotation as a weeknight meal. I served it over cous-cous. This last time I made it I was running short on time so I sauteed the chicken on the stove and topped with sauce and simmered it for a few minutes. It was at least as good as in the oven. I added half a green pepper to the sauce and added a cup of peas to the chicken. Served it with basmati rice.
