About this Cook
I am a mother of four, homeschooler, and work part-time as an RN in the ICU and ER.
My favorite things to cook
My favorite things to cook are my favorite things to eat. I'm always trying new things and inventing and adapting recipes. I like crock pot recipes and casseroles that I can double and freeze for later. With my busy lifestyle I want convenience but wholesome food for my family.
My favorite family cooking traditions
Due to my work schedule my husband has made every Thanksgiving turkey dinner we have hosted. My mom has taught me how to make the lamb curry dinner we eat for Easter at her house. My favorite thing to make for holidays are baked goods - pies for Thanksgiving, cut-out cookies for Christmas, and grandma's Polish sweet bread at Easter.
My cooking triumphs
Any time my family enjoys a peaceful, nutritious family meal.

Pumpkin Chocolate Chip Cookies I
I supervised my 11-year-old son making these for "life skills" a.k.a. "excuse to make yummy treats" part of his homeschooling. We used fresh cooked pumpkin, since I had it on hand. They turned out delicious. Next time we will use parchment, though.

African Curry
I loved this. I used skinned chicken thighs with bone left in and added 1/2 cup of fresh peas from the farmer's market. I kept it mild and sweet and completely forgot about the lemon juice at the end. It didn't need it.

Mama's Asian Chicken and Rice
Like other reviewers, I doubled the sauce. I also mixed in some steamed veggies at the end. I used Jasmine rice, but the nutty flavor of brown rice would do well too. For less than 400 calories per serving, this recipe is hard to beat.
