White Chocolate Cake

This was a huge disappointment. I followed the recipe to a T on this one. The cake would not cook through and after 50 minutes in the oven the center was still "liquid" and the edges were burning. As for the taste, I don't know if it was the buttermilk or what, but it was terrible and almost tasted like cornbread and baking soda. The part of the cake that did cook was extremely crumbly and also had a "cornbread-like" texture. Will not make again!

Marshmallow Fondant

After reading all the rave reviews this recipe was a huge disappointment and not near as easy as other reviewers led me to believe. The fondant literally broke my mixer because it was so thick and hard to stir. After adding about a lb more in powdered sugar than this recipe actually called for the dough finally got "less sticky" at least to the point where I could roll it out some. However, it wasn't thick enough like store bought fondant and tore much to easily. It had a play dough texture only softer so you had to be EXTREMELY careful with it. Since it had to be rolled out so thick to avoid tearing the recipe didn't go a very long way and I didn't even have enough for one novelty cake the size of a regular sheet cake. As for the taste, it's better than store bought fondant, but it's not by any means good. It's sugar overkill and your much better off just making a regular buttercream or cream cheese frosting. I will not make this again.

Blueberry Walnut Salad

Wow this was GOOD! I normally don't care for salads much because there just isn't enough to them for me. However, this salad was delicious and I could definitely eat this by itself for a meal. The feta cheese and the raspberry dressing were the best parts! Those who substituted these for other ingredients really missed out. This salad has great presentation too. Next time I have to cook dinner for guests this will definitely be on the menu!!

Purple Monstrosity Fruit Smoothie

After reattempting this recipe I'm changing my review and giving it an extra star. This recipe really makes closer to 2 servings than 5, but since I only wanted one here is what I did. I used 1 frozen banana cut up into chunks instead of 2, I added 1/2 c of blueberries because the banana taste is very overpowering, I used about 3/4 c. of fat free vanilla yogurt. Added about 1/2 tbsp of honey. Omit vanilla (left a HORRIBLE aftertaste the first time). I tried both juice and milk with this recipe before and neither were to my liking. The yogurt made a HUGE difference! The shake has a great smooth and thick texture so you will get full if you are having this as a meal replacement shake. The idea of using frozen banana chunks instead of ice is also fantastic. This makes it easier to blend in a regular blender and gives it the same texture that you'll get from a smoothie made with a commercial blender (no ice chunks!). I will try again with raspberries next time!

Baked Pesto Chicken

Awesome recipe! I poked holes in my chicken breasts and put them into zip lock bags with pesto sauce. I let them marinate in the pesto for 3 hours in the refrigerator. I cooked them in a pan with a small amount of water on the bottom for 40 minutes then topped them with tomato and swiss because that's what I had on hand. The chicken came out very moist and had great flavor!

Almond Crusted Chicken with Tomato Citrus Sauce

I love the almond coated chicken concept for this recipe. However, I prefer to prepare a different sauce then the one used here. Tomato sauces just aren't my favorite. I make a lemon butter sauce to go with this chicken instead.

Best Ever Chocolate-Free Blondies

Not awful, but even just regular brownies from a box taste better than this. Although if you're trying to avoid chocolate these are probably a good choice. I highly recommend the "mmm-mmm better brownies" recipe from this site.

Spinach Dip with Water Chestnuts

This one is perfect as written above. I prefer the leek soup over the vegetable soup, but really it's great either way. I usually serve it in a sourdough bread bowl with wheat things. People love this dip!

Spinach Dip I

Every time I take this dip anywhere people rave about it. I use the Knorr leek soup mix instead of vegetable and I also add one can of chopped water chestnuts and some chopped green onion. I usually go to the bakery and buy a round loaf of sourdough bread and use it to make a bread bowl. It makes for a very pretty presentation. This dip is best served with wheat thins!

Beef Tips and Noodles

I love love love beef tips and noodles! This has been a family favorite for a long time and the only change I make on this one is that I omit the 1 cup of water and add about 1/2 cup of red cooking wine instead. If your sauce is too thick you can gradually add a little water in by the tablespoon. The wine gives the sauce a much better flavor. Great recipe.

Garden Pasta Salad

I'm giving this recipe 4 stars as is. With a few minor adjustments this is definitely a 5 star recipe and very similar to my mom's pasta salad. Two bottles of dressing is overkill. You definitely only need one! I also omit the carrots, celery, and bell peppers. I substitute swiss cheese for parmesan cheese. I also added chopped pieces of pepperoni and hard salami and 1 can of sliced black olives. One of my favorites.

Toasted Coconut, Pecan, and Caramel Pie

This was SO good. My whole family loved it. However, I will just forewarn anyone who wants to make it that it is VERY sweet. This pie was so easy to make that I was almost afraid I didn't do it right at first. Also the recipe does make TWO pies so you may want to cut all the ingredients down in half. The pie also tastes better the next day after it's had more time to set in the refrigerator so whenever possible it's a good idea to prepare this pie the night before your event. I am definitely making this one again!

Cream Puffs

This is truly a 5 star recipe once you get it down because they are not the easiest thing to make. For those of you that said your puffs did not rise in the oven here is what you need to do: Put the stick of butter and 1 cup of water in a pot. Bring it to a boil with MEDIUM heat. Have your 1 cup of flour and your salt in a bowl next to the pot so that as soon as it starts to boil you can dump it right in. The trick is to get the dough prepared right away as it starts to boil. If too much of the water gets evaporated your dough consistency will be too runny to rise into puffs. Once I dumped my flour in I stirred pretty quickly and as soon as the dough texture formed I dumped it into my mixing bowl and beat in all 4 eggs right away. If you do not do this QUICKLY the eggs will cook inside the hot dough. This is why some of you on here may have said your puffs came out "eggy" tasting. I added 2 tsp. of vanilla extract and 1 tbsp. of sugar to my dough. Once it was all mixed together I used a greased muffin pan to cook my puffs and give them better form. I like mine larger so I used an ice cream scooper to fill the pan with dough. I baked them for exactly 20 minutes then took them out and poked 2 holes in each one with a tooth pick to let the heat escape and keep them from collapsing. They cooled for about 40 minutes. I piped the cream filling mixture into them to get them really full and they also stay cleaner this way. I used white chocolate pudding instead of vanilla.

Coconut Cream Cake I

Awesome cake. I made this for a friend's birthday and she loved it. The only thing I will do next time is cut the cream mixture in half or maybe even in 1/3. It made WAY too much and the cake would have been very soggy if it was all used.

Satiny Chocolate Glaze

I made this glaze to go on top of some cream puffs and it was awesome! I just used a microwave-safe dish to make this because I didn't want to mess with a double boiler. It was very easy. I microwaved on a lower power setting for about 45 seconds and then stired before heating for another 30 seconds. Came out great! The only thing I might do different next time is add a little less corn syrup and maybe a little more butter because the glaze came out a bit thick and it was difficult to drizzle it neatly on top of my cream puffs.

Chicken Enchiladas V

I made these for my Dad last fathers day and he and everyone else in his office loved them. I actually prepared everything and froze the pan and gave it to him with baking instructions so that he could heat it up and eat it whenever he wanted. It still came out great. I followed the recipe exactly on this one.

Cherry Chicken Lettuce Wraps

These are GOOD! I bought a rotisserie chicken and just used that instead. I also substituted cherry craisans instead of real cherries. I left out the ginger root and carrots as well and added some extra soy sauce and teriyaki sauce. My roommate complimented me on this one. Thanks for the great recipe. I will definitely make these again.
