Yummy!!!! I cheated a little bit and used a mushroom risotto from trader joes. I used the seasoning. Probably made it not low sodium. I added more vegetables, and only cooked them for 3 minutes. I like lightly cooked veges. Also substituted parmesan for feta. Delicious! Will be making again!

Honey Lime Tilapia

Delicious. I chose to omit the cheese. the butternut squash needed to cook a little longer than the fish. If I did it again I might cook the squash by itself for 10 or 15 minutes. Then add the asparagus and fish. Still, the honey lime was a nice flavor

Oriental Green Bean Salad

I will make this again! Love the oyster sauce! I used extra pepper for momre heat. Saucde didn't thicken for me, but that didn't affect the flavor.

Szechuan Spicy Eggplant

Yum!! Will make this again. I used 1T spicy garlic sauce, because I like spicy. Also substituted 1/2 lb Morningstar 'beef", because my boyfriend doesn't eat beef. Used one whole pound shrimp. Loved the flavors of the sauce!

Apricot Beef Stir-Fry

This was pretty good. Not spectacular. I have a lot of apricots so I was looking for something good to do with them that didn't involve a lot of sugar and butter. So I used real apricots and not canned apricots. And I didn't replace the syrup with something else. I'm sure the recipe as is would be yummier. I'm just trying to be healthier.

Cognac Shrimp

This was pretty tasty. Rice took longer to cook that the recipe states so if I were to cook it again I'd hold off on adding the veges. I don't like overcooked veges. I don't know if I needed the Cognac either. Think it would have been fine without it.

Sweet and Tangy Marinated Vegetables

Just tasted like sugar and vinegar sauce. Could not taste ranch flavor. Was edible just because the vegetables were good. Will not make this one again.
