Olive Salad for Muffalettas

Fantastic! I think I could have used a bit more red wine vinegar, but I'll try it next time. Either way, it was wonderful by itself and on a sourdough hot ham and cheese sandwich. Thanks for the recipe!

Quick Garlic Toast

SO easy and so good! I didn't realize I didn't have any frozen garlic toast, so this was a stand in. It will continue to be as well - yum! Also have added cheese which is excellent as well. Thanks for the easy tasty recipe!

Batman's Best Caesar Dressing

For such a quickly prepared recipe, this dressing is FABULOUS!!! I didn't have any anchovies or paste on hand, so I omitted it and it was still wonderful. I know I'll love it even more the next time I make it with the paste. Thanks for the keeper!!!

Asparagus Rolantina

I expected more out of this. The proscuitto and cheese overpowered the asparagus in my opinion. I love asparagus, but this recipe made me want to take the asparagus out and just eat the meat and cheese. Too rich of flavors to be paired with a mild veggie. Fun making it, but I will not make this again.

Artichoke and Chickpea Stew

Unbelievably easy and SO delish!!! I used marinated (in the small 6 0z jars) artichokes, and I think it gave a great flavor. Fantastic mix of fresh ingredients. This will become a weekly meal at our house. GREAT for those watching their cholesterol - all wonderful ingredients with little or no cholesterol. Thanks for the recipe!

Spanish Rice II

I only gave this four, because the night I made it my husband and I were not all that impressed. The next day - completly different story! YUM! I guess the flavors intensified overnight. I will definitely make this again, and I will follow others suggestions and try chicken broth. Thanks for the recipe!

Hot Italian Giardiniera

Oh my!!!! This stuff is FANTASTIC! I eat it by itself and can only imagine how wonderful it will be on sandwiches and other food. I chopped my veggies larger, not diced. All I can say is FABULOUS! Thanks so much for this recipe!

Fantastic!!! Pickles stayed crunchy and each jar tastes better and better. To spice things up a bit I made some jars with sliced jalapeno's....yum! Great recipe...thank you!

Cajun Red Snapper

FANTASTIC! My first attempt at red snapper and we loved it. I omitted the butter completely, and rubbed the filets with olive oil. I then cooked them in a small amount of olive oil. I also sprinkled with some cracked red pepper for a little more heat. Yum - thanks for the great recipe!!!
