Potatoes Au Gratin with Fennel and Bacon

This was pretty good. I left out the fennel because my husband and I are afraid of the licorice taste. But the cooking time is lessened slightly with parboiling first and it was really cheesy bacony good.

Albondigas Soup II

This is the first Albondigas Soup I've ever had, so I can't compare it to others but it is really good. I almost double the meat and definitely double the spices. I use Napa Cabbage instead of the awful green stuff. It's good for a light dinner which is how we always have it. A+

Mexican Corn

I only used 3 1/2 jalapenos and could only BARELY taste any heat. Will use more if not all next time. First time for this recipe and decided to get Trader Joe's frozen roasted corn...OMG!!!!! Used a bit less cream cheese and butter but ended up having to add a bit of sour cream to make it creamier. I sampled a bit too much of the cream cheese...oh well. The roasted corn made it indescribably delicious. Can't wait to tackle the few leftovers I had. My new favorite side dish!!
