Baked Potato Soup I
This soup was very easy and very good! I made some modifications. i used red potatoes b/c I prefer them. I also cubed several of the potatoes, but i took two small potatoes and 1 C milk and mashed in a food processor. It gave the soup a thicker, heartier texture. Like others, I used skim milk, reduced the butter, and used light sour cream and cheese. You couldn't tell at all! However, I also tried substituting turkey bacon and it wasn't the same. It wasn't nearly as crispy and tasted more like I had included pieces of ham. Next time I'll use real bacon! Overall the soup was very good! I'll definitely make again.
