Pineapple Crisp
Fantastic!! I made this with fresh pineapple...very good...will definitely make again!!

Cream of Wheat Griddlecakes
This recipe is excellent! I made a few changes: I used a splash more milk to make them a little thinner...we prefer thinner pancakes :) I warmed the milk for about 1 minute, then mixed in the cream of wheat. I had that sit while I prepared the rest of the ingredients, then added it to the batter mixture. I used only 4 tbsp of sugar and a little less than 1/2 cup of oil. Next time I would like to try using 1/2 oil and 1/2 applesauce for a healthier version. We LOVED these pancakes and will make these again for sure. I also made a blueberry sauce for syrup..delicious!

Lentil Soup
Very good soup. I changed it up a little and used some suggestions from others. I added more of each spice, plus a generous 1 tsp each of cumin and coriander, 3/4 tsp of curry powder, 4 carrots, 5-6 celery sticks, potatoes, green beans, 4 cups of vegetable broth instead of chicken broth and 4 cups of water. I also added brown rice, barley, a mixed beans to this recipe as well as the lentils. very hearty and nutritious. And I only used about 2 tbsp of the oil instead of 1/4 cup. Will definitely make again!
