Cheese Straws

Not too bad!! Based on other reviews, I added pepper, onion and garlic powders. I also used 1 full cup of butter. I also sprinkled coarse salt on them after shaping, but before putting them in the oven. If you roll them out as thick as they are in the picture, they have to bake a LOT longer. We wound up using a tiny cookie cutter, making thin crackers. Those cooked up in eight minutes or so. With these adjustments, they were REALLY yummy. Kids loved making them and eating them!

Strawberry Jam

Un-freaking-believable! This is so, so good; I want to eat it out of bowl all by itself! We used strawberries that had been freshly picked in Ventura, CA; the area is the strawberry capital. It has such a fresh, clean flavor! I took the suggestion of one reviewer and threw in the rind of the lemon that I had juiced. Also, I didn't have a working thermometer, but I let it boil ten minutes and then started the plate test. After about 15 minutes, it was ready to go. Perfect!!!

Crispy Fried Chicken

Amazing, amazing recipe. I never thought I could fry things until now! I learned something, too. Cast iron is THE way to go. My chicken would not fit in one pan, so I had a high-quality steel pan next to my cast iron. The chicken skin stuck to the steel, and the color never deepened beyond a light golden brown. The cast iron got a beautiful color, and almost nothing stuck to the bottom. Even though the flames were equal, the cast iron just got so much hotter. Excellent recipes, excellent tips!

Hasty Chocolate Pudding

Oh my goodness, this is so wonderful! It is very similiar to a recipe my babysitter made me when I was a child. My trick is to sift the sugar, cornstarch and cocoa before letting the milk touch them. It comes out smoother that way. Also, using evaporated milk..even nonfat...makes it super creamy. I do this on the stovetop because I the smell brings back great memories. And I, too, add a pat of butter. I don't know why, but that's what my babysitter did. :) OUTSTANDING recipe!

Butternut Squash Soup

Absolutely outstanding. I do use about 48 ounces of chicken broth and only one package of cream cheese, because otherwise it's WAY too thick. This has become a huge favorite in my family, and requested every fall and winter. Everyone loves the pepper! To make it super easy and quick, I pick up four packages of the cubed, peeled butternut squash in the salad section of Trader Joe's. Very yummy, and very filling!

Fluffy Pancakes

I am 37 weeks pregnant, and had a sudden craving for pancakes. I have never had any clue how to make them from scratch, and we were out of Bisquick. I saw all the great reviews, and gave this a shot. I did switch out buttermilk for the milk and added a bit extra. THESE WERE FABULOUS!! I will NEVER make pancakes with a mix again! They were so easy, so tasty, and I was sitting and eating within ten minutes. Thank you!!

Apple Fritters

My husband I thought these were great! They are not too sweet, but they taste great with powdered sugar, dipped in preserves, or anything else. I wouldn't say they are bland, so much as a simple tast to bring out the apples. We had to fry them about five minutes on each side, but they are easy to make and very yummy!
