Hasty Chocolate Pudding
Oh my goodness, this is so wonderful! It is very similiar to a recipe my babysitter made me when I was a child. My trick is to sift the sugar, cornstarch and cocoa before letting the milk touch them. It comes out smoother that way. Also, using evaporated milk..even nonfat...makes it super creamy. I do this on the stovetop because I the smell brings back great memories. And I, too, add a pat of butter. I don't know why, but that's what my babysitter did. :) OUTSTANDING recipe!

Butternut Squash Soup
Absolutely outstanding. I do use about 48 ounces of chicken broth and only one package of cream cheese, because otherwise it's WAY too thick. This has become a huge favorite in my family, and requested every fall and winter. Everyone loves the pepper! To make it super easy and quick, I pick up four packages of the cubed, peeled butternut squash in the salad section of Trader Joe's. Very yummy, and very filling!

Fluffy Pancakes
I am 37 weeks pregnant, and had a sudden craving for pancakes. I have never had any clue how to make them from scratch, and we were out of Bisquick. I saw all the great reviews, and gave this a shot. I did switch out buttermilk for the milk and added a bit extra. THESE WERE FABULOUS!! I will NEVER make pancakes with a mix again! They were so easy, so tasty, and I was sitting and eating within ten minutes. Thank you!!
