Connie's Zucchini 'Crab' Cakes
We didn't want to fry them so we followed MANDT2's comment. I actually don't love regular crab cakes... too mushy. I thought these were really great. Made a creamy legume soup to go with. Excellent veg dinner. If you salt and squeeze out water watch the overall salt level since Old Bay has a lot of salt. Next time we plan to find a recipe for lower salt Old Bay and add more seasoning.

Spicy Mexican Style Zucchini Casserole
Made with quinoa instead of rice. Used less cheese and salsa. Thought what I ended up with was amazing. Thanks for the jumping off point!

Chi Chi's Corn Cake
So I kindof thought I was making a very soft corn bread. Not so much. While it was a very interesting, and quite yummy treat (read:dessert item) it was NOT a corn bread. Just FYI for the northerners out there.
