Gumbo Style Chicken Creole
Another good recipe for leftover chicken. I made a few changes to suit our tastes: Replaced mushrooms with 1 1/2 cups frozen cut okra; added 2 cups chicken broth, as suggested by other reviewers; used 1/2 red pepper and 1/2 green pepper, because that's what was in the fridge; substituted 1/2 tsp cajun/creole seasoning for the liquid pepper. Accompanied by whole-grain rustic bread for soaking up the sauce.

Hodie's Sloppy Joes
Even my husband who doesn't like sloppy Joes liked this. The second time I used blackberry jam in place of the brown sugar -- very tasty!

California Sherry Chicken
My husband and I agree this is a "keeper." I'm glad I read the reviews and used a good quality sherry rather than the cooking sherry. I added julienned sweet red pepper to the veggies for color and texture.
