About this Cook
Married, mom of 1 toddler who eats just about everything that isn't a vegetable. I don't eat meat, pork, or poultry but my family does, so that can make mealtime a challenge.
My favorite things to cook
Pretty much anything.
My favorite family cooking traditions
My mom's frittata and homemade ravioli - recipes handed down from her grandmother. She makes them the old fashioned way, and everyone has to pitch in so it's really fun. I also host Christmas every year for family and friends, and love coming up with a varied buffet so everyone can try something new.
My cooking triumphs
Love Mussels (see recipe I submitted), my dad's rosemary chicken, french dip, beef stew, and pulled pork in a crock pot.
My cooking tragedies
Baking with Splenda - even the birds wouldn't eat it. One spectacular failure with chocolate chip cookies that haunts me to this day.

Slow Cooker Barbequed Pork for Sandwiches
A comment about the leftover broth. I know I wrote "discard" but you really don't have to! I've used the broth to make beef stew (you'll need to balance it with some red wine), french onion soup, etc. I simply meant to remove it from the crock pot.

Chicken Satay
Made this for my family and they loved it! Only change was I didn't bother with the skewers (I have a toddler and that spells disaster). Chicken was moist and tasty. Will definitely make again. I would suggest to cooks to do this on the grill outside since the marinade makes a big smoky mess inside.

Paradise Pumpkin Pie
This is a staple for Thanksgiving and Christmas. Easy to make using a blender, and is a hit every single time.
