My favorite things to cook
I love to bake. I love to try new things, I like comfort food but I also really like to cook dinner food that tastes amazing but is also healthy, with a lot of vegetables. I love love love Mexican food.
My favorite family cooking traditions
My mom makes delicious food. So everything she makes I like...except for her St. Patrick's Day meal. She makes mean mashed potatoes and gravy.
My cooking triumphs
I have this AMAZING recipe for "Thick and Chewy Chocolate Chip Cookies", everyone that has tasted them has agreed with me they are the best chocolate chip cookies we've ever tried. I also made the lattice topped "Grandma Ople's apple pie" I have very little experience with pie and so I felt pretty proud when people were fighting over the last piece at Thanksgiving dinner.
My cooking tragedies
Recently I tried to make dinner for my husband, but I was really tired so I threw some things together because I didn't have what the recipe called for. It was supposed to be a "Wet" burrito casserole, but it was disgusting. I only had wheat tortillas and I didn't have the right spices. I also used cream of mushroom soup to make it "wet". So basically we ate tortillas with refried beans in them with the mushroom soup on top with cheese over it. I baked it for like thirty minutes and the cheese got crispy. Lol, it was nasty.

Special Buttercream Frosting
so insanely delicious! I used all butter because I don't like cooking with shortening. It was so so good! I used it for my daughter's birthday cake and everyone kept asking about it.

One Bowl Chocolate Cake III
easy and delicious but trust me when I say it needs more cocoa I added a whole cup the second time because the first time it was so moist and delicious but needed more cocoa flavor. Maybe it's the brand I add but ADD MORE COCOA!

Stovetop Granola
I followed the direction except for I added about 3/4 a cup toasted coconut. Upped the amount of oats to three cups instead of two and added cinnamon and vamilla. Next time I make this I will on;y add an extra 1/2 cup oats because with the addition of that and the coconut and not changing the liquids it came out a little dry. I will add more cinnamon next time and at least double the cranberries. I also turned on the oven to 450 degrees and then turned it off and let the granola bake on the cookie sheet for a couple of minutes. I recommend doing this because it dries it out a little and makes it more like granola.
