Flourless Chocolate Cake II

This cake is absolutely delicious--just as good as any flourless chocolate cake in a restaurant! However, I had the same issue as some other reviewers: the cake was not done after 30 minutes in the oven. I took it out after 30 minutes and after letting it cool in the pan for 10 minutes it still came out mushy in the middle. Not to worry though--it was like eating chocolate pudding. Next time, I will bake it a little longer. Definitely worth your time to make it!

Italian Sausage with Farfalle and Broccoli Rabe

This one's a keeper! My grocery store didn't have broccoli rabe so I used regular broccoli, other than that, I followed the recipe exactly. It was delicious and I'm not even a big fan of sausage!

Spinach Stuffed Chicken Breasts

I used Parmesan instead of feta and four pieces of bacon per chicken breast instead of just one. I also added some Kosher salt & fresh ground black pepper to the filling. This was one of the best meals I've made in a long time! Thank you!

Penne with Pink Vodka Sauce

This sauce is delicious! I cooked up a chicken breast (seasoned with fresh ground pepper, Kosher salt, oregano, basil & thyme) and then made the sauce in the same pan to pick up the extra flavor. I also doubled the amount of garlic. Delicious! Oh, and the 8-10 minute recommendation for the penne cooking time was great--it was shorter than the amount of time listed on the box of penne, but the pasta turned out perfectly al dente. I will make this one again! :)

Sweet Potato Bread I

I've made this recipe twice now and have gotten nothing but rave reviews. However, I did alter it slightly: I subbed unsweetened applesauce for the the oil, added 1/4tsp allspice and used freshly grated nutmeg, which makes a big difference in flavor. I love the exotic flavors these spices give, so with the alterations, I would give the recipe a 5-star rating.

Chocolate-Cran-Oat Cookies

Delicious! I made these for a bake sale and got rave reviews. I did make a few changes, though. First, I used half butter and half shortening. Second, I used all white chocolate chips. Third, I only had all-purpose flour, so I did not use any whole wheat flour. Also, I made HUGE cookies (per my husband's suggestion). Instead of 32 cookies, we got 11! If you decide to go the HUGE route, bake for 12-15 minutes.

Pork Tenderloin with Mustard Sauce

Very good. I used the slow cooker for this, rather than the oven, so it shredded like pork barbeque does. Beware of the mustard sauce; I like spicey stuff, but wasn't expecting how spicey this got. Don't get me wrong, it was good--just don't underestimate it!

New England Clam Chowder I

Extremely good--6 stars on a scale of 1 to 5! We substituted clam juice for the water, used Kosher salt rather than iodized (didn't decrease amount, however) and put in half whipping cream and half 1% milk rather than half-and-half. We also only used two 6.5 oz cans of chopped clams (put them in the food processor to make them a little bit smaller). I was worried that wouldn't be enough, but it was! It was absolutely delicious and our friends were quite impressed. It was a little thin so my husband thickened it with a mixture of cornstarch and milk. Very, very good. This was the first time we'd made clam chowder from scratch, and we will not be looking for another recipe; this is the one!
