Chuck's Favorite Mac and Cheese

Great base recipe with adjustments. Skip the bread crumbs entirely. DO add 1/2 cup milk to the mixture. And to create a creamier sauce, blend the cottage cheese until nearly smooth, then add remaining ingredients in processor and whirl together for a few seconds. I also added hot dogs for more flavor!

Sausage Cheeseburger Pizza

I was very skeptical about this recipe, but it really works. I used ground beef instead of sausage, diced the dill pickles, and kept it easy with Pillsbury pizza crust. My husband said it tasted like a McDonald's cheeseburger!

No Bake Peanut Butter Pie

Excellent with adjustments. I made an Oreo crust and it worked well. I also used 1.5 cups of peanut butter and only a 12 oz. (tub and a half) of whipped topping. Not too much for two pies then, and very peanut buttery!

Bean Burrito Casserole

Great meal. I sauteed half of an onion in oil, sprinkled with garlic powder and added two cans of cream of chicken soup, skipping the sour cream. I then placed cheese in mix and stirred just enough to combine ingredients before pouring mixture over burritos. With salsa it was tasty!

Black Bean and Salsa Soup

Oooo - YUM. I pureed one can of black beans and one can of pinto beans with the other ingredients, then added cooked bacon, onion and another can of whole pinto beans. I also put in a little hot sauce for kick and black pepper. But it is good in its original form too!

Crawfish Chowder

Great base recipe that you can really change up! I made this healthier, using 98% fat-free mushroom soup, white chicken breast meat instead of seafood, skipped the cream cheese and just used milk. I added 1 Tablespoon of flour to thicken and it was WONDERFUL!

I used almost fat-free mushroom soup and only 1/4 C. cheese. My husband and I have weird hours, so he eats a lot of left overs. He talks about this meal every day when we chat about what he ate for dinner that day. Kudos.

This is a solid dish and SUPER simple. I threw everything into the crockpot on high for 3 hours. I also used Morning Star veggie crumble and made is a low-fat vegan dish. Great.

Freezer Caramel Drizzle Pie

Moo. I used a chocolate cookie crust and put chocolate chips and a little chocolate drizzle on the plate in addition to the caramel and pecans. One guest asked if it was rude to lick the plate. Easy and good!
