Cajun Crawfish and Shrimp Etouffe
My husband and I have made this twice and loved it both times! I especially love that it is a great way to use whatever seafood we happen to pick up - we did crawfish/shrimp the first time, mussels the second and will be using all shrimp when we make it for lunch today. I also love how easy it was for me to update this recipe to be gluten free. I can't eat stuff that uses flour as a thickener because of Celiac disease but I was able to use rice flour to make the roux and it tasted really good. My husband said he couldn't tell the difference.

Slow-Cooked Oriental Chicken
Awesome. Super simple and my husband and I loved it. The only thing I don't like is having to cook the chicken before putting it in the crockpot because the crockpot is usually my lazy way out of cooking. Next time I might try just throwing it in raw and letting it cook a little longer, but I'm worried that may make it become slush.
