About this Cook
My name is Monica, I'm a stay at home mom living in northeast PA with husband, three human children, three furbabies, and many freshwater fish in aquariums. In my "spare" time I run my website, moonpye (dot) net and I can be found on Facebook, sharing recipes there.
My favorite things to cook
I was a strict vegetarian for 9 years until I started a family... now I do eat a little chicken & fish but no beef at all.
My favorite family cooking traditions
Grew up on potato pancakes!
My cooking triumphs
SOUP!! Also good with stuffed artichokes, potato pancakes, and a ton of other dishes. Getting much better with cookies & cakes lately too.
My cooking tragedies
I don't even want to go there! LOL

Peanut Butter Chili
I wasn't expecting much, but I like peanut butter soup so I decided to give this one a try. I think there's a bit too much garlic in it, and I increased the chili powder to a tablespoon and added more cayenne because I like things spicy, but overall I liked this and would make it again. UPDATE: 8/8/09: Made this for the third time, it really is sooo good. I did cut down on the garlic. I doubled the recipe this last time and glad I did. The leftovers are really wonderful after sitting in the fridge all night. I like it served with grated cheddar.

Carnation(R) Raisin Bread Pudding
Excellent and easy peasy! I omitted the raisins because I don't like raisins, but I think cranberries will be tasty and will try them in the future. I used whole grain bread because that was all I had in the house, and 3 leftover cinnamon rolls (so I reduced the amount of cinnamon and nutmeg slightly). I added a green Granny Smith apple peeled and cubed as well as walnuts, and after baking I drizzled with T Marzetti caramel sauce and topped with whipped cream. It smelled heavenly while it was baking. I could barely wait to taste it! I ended up having to bake for 50 minutes total. I will make this again and again!!

Awesome Steak Marinade
Very tasty. Cut down on the amount of steak sauce (used Jack Daniels brand) and did not use the blender (I hate to clean it!). Next time will add fresh garlic. Both kids & husband liked it! Thanks!!
