1-Pot, 3-Bean Chicken Stew

This was good, quick, and easy. To shorten the cooking time and because I didn't plan ahead, I put frozen chicken in my crock pot to cook all day while I was at work. When I got home I pulled it apart and added it to the other ingredients in a pot on the stove. Very nice stew on a cold day. Thanks for the post.

Omelet in a Bag

These were awesome. We made them on a camping trip, even though the family was skeptical. Everyone filled their own pouches, using a sharpie we marked our names on the bags, and voile! breakfast. Thanks for the post. We will definitely be using this one again!

Rabbit Fricassee Cuban-Style

Very comforting and tasty. The family loved this dish and really raved about it. I used chicken instead of rabbit...the only request they made was that next time I use boneless chicken (they are so spoiled!). I will be making this again and again.

Roasted Rosemary Cauliflower

Loved the flavor, and this was so easy to make! I wish I'd had fresh veggies for this, but since I didn't, I used a bag of chopped broccoli and cauliflower, coated the veggies with the oil and seasonings right in the roasting pan. Even my picky son said it was tasty! A keeper for sure. Thanks for the recipe.

Aunt Jewel's Chicken Dressing Casserole

This was super easy. I open a 2-3 lb. package of frozen boneless, skinless chicken thighs, pop the block of it in a 2 quart baking dish with a lid into a 400 degree oven for about 30 minutes. The chicken cooks in its own juices and is very tender. Then I just cut it into bite size pieces and use the liquid from the chicken for the broth. I've found this to be a great step and timesaver! And the family loves this dish. I never have any leftovers.

Cranberry Brownie Torte

This was an awesome recipe and very simple to make. Needing a dessert for my husband to take to work today, I tried this recipe last night. I sped up the cooling process by putting the baked brownie in the freezer for a few minutes while I mixed up the other ingredients. Don't be alarmed if the cream cheese and juice mixture are very thin at first, it will thicken nicely when you add the whipped cream. Yummy dessert that I will definitely be making again and again. Thanks for posting.

Texas Black Bean Soup

This was delish. I only used one can of tomatoes with chilies and 2 tbsp chili pepper (I figured I can always add more heat if necessary). I had some turkey sausage in the fridge which I browned and added to it just because. Everybody liked it.

Chicken Chile Spaghetti

Always looking for a crock pot recipe, this one sounded good. I assembled all the ingredients before I left for work this morning. It smelled so good when I came home this afternoon, but after we tasted it, I threw it away and we ordered Chinese. The problem was that the spaghetti noodles became way too mushy and there was just no going around them. Maybe it would have been better if I'd not made it the original way, but the poster did say it was good for a crock pot. I will not make this again, sorry.

Pork Sausage and Cabbage Pitas

This is a really quick meal to whip up and delicious as well. I gave it five stars for ease in preparation and flavor. I have made it with mild pork sausage a couple of times. Once, to make it a little healthier I used turkey sausage, which did not have as much flavor. No matter which sausage I used, I found it had a lot of spice with the pepper...I just need to remember to back off the hot pepper next time. Whew! It was a little bit too spicy, but darn it, these were addictive!!! The sour cream balanced the spiciness, so that was a relief! Try this recipe, you won't be disappointed.

SL Egg Mushroom Roasted Red Pepper Burritos

Good...I made two 10-inch burritos instead of the 4 smaller ones. Added some tabasco for a little heat..yum. Also had to use canned mushrooms since I was out of fresh. Will be making this one again.

Summer Bean Salad II

I love bean salads, and this one did not disappoint. Light and filling, it will be great for my dinner tonight and lunch at work tomorrow. The basil gave it much needed color and someone mentioned using green onions, that would have worked well too. I added a small jar of artichoke hearts.

Veggie Potato Salad for a Crowd

Although different from traditional potato salad, I found the change refreshing and light. It was a huge hit at a family gathering yesterday and I will be making this often. I'd like to have these leftovers on-hand to eat for several healthy meals and snacks. Update: My husband requested this to take to a picnic at work tomorrow, and I've already promised to make it for a potluck luncheon in 3 weeks. Fantastic!
