Jalapeno Poppers of Champions
These are quite excellent. I used whole peppers and removed the stem and just enough of the inside so that I could stuff them full of cream cheese. I used light cream cheese so that the heat of the oven wouldn't cause the cheese to run out all over the baking sheet. I also used real bacon...one slice per pepper. Oh my, were they good! There were enough of the seeds left inside the peppers to give them a definite kick! I'll make these again and again. I didn't time the cooking time but baked them until the bacon looked crispy. Probably about 30 - 45 minutes. Thank you for the great recipe!

30-Minute Minestrone
This was excellent. I'm on a low carb diet and instead of pasta I added black soy beans (don't grimace people, they are nearly the same as regular beans, just low carb). I also used beef stock and a bit of Tabasco sauce. Mmm! Also, I didn't saute the veggies, I just threw them all in the pot and it turned out wonderfully. I'll definitely make this again.

Crustless Spinach Quiche
This is really yummy! I used 5 eggs and added some cubed ham. I love spinach and eat it often but I did find the spinach flavor a bit overpowering. That's the only reason I didn't give it 5 stars. I'll definitely make this again, maybe only use 1/2 package of spinach next time. I love recipes that are quick and easy and this one definitely was!
