Hot Artichoke and Spinach Dip II

This is a fantstic recipe. The only thing I did differently is I used real artichokes instead of canned. I steamed the artichokes and then scraped some of the meat off the leaves and cut the artichoke heart into chunks. I wasn't sure if it was going to make a difference but it really did! The artichoke itself was so rich and really added to the dip. Yummmm, I will defnitely be making this one again!

Roasted Chickpeas

This was a great treat! I waited to put oil on them until 15 minutes before they were done. I sprayed them with a little oil and then seasoned them. They were a delicious and healthy snack.

Never Fail Pie Crust II

This pie crust was easy and delicious. It made lots of dough, so much that I didn't use it all! I switched out the shortening for the same amount of butter. Using butter was the key in making this dough flaky and chewy. I will only ever use this recipe because it turned out so well!

Baked Dijon Salmon

This was delicious, but a little rich. I think we might try using this recipe for making salmon burgers. The spread would be fantastic as a summer burger. We are definitely going to be making this one again!

Tzatziki II

This was amazing Tzatziki! I used Yogurt-Cheese to make it even creamier and thick. We used it as a side dip for roast lamb. It was fantastic and even better the next day when the flavours melded together. Yummy!

Asparagus and Tomato Salad with Yogurt-Cheese Dressing

I loved the combo of the asparagus and tomato but the dressing wasn't my favourite. It was too tangy with both the mustard and the yogurt. I would probably use a different dressing if I were to make this again.

Grilled Halibut with Cilantro Garlic Butter

The first time I made this I used Tilapia which was delicious and the second time I used halibut. They were both delicious and super easy to make. Everyone raved about how good it was. This has become a staple in our recipe book!

French Crepes

This is one of the best crepe recipes I have ever tried. I doubled the recipe up which produced a lot of crepes! I also used half whole wheat flour and half regular flour to make them a bit more nutritious. I have to admit I was a little nervous to see how they would turn out but they were fantastic. Definitely one of my favourite breakfast recipes!

Turkey Bolognese Sauce

We absolutely love this recipe. It is delicious. I have never had the time to simmer it for three hours but it is always super tasty after an hour. Sometimes we add an extra jar of sauce to thicken it up. We also put it on top of spaghetti squash instead of regular pasta, mmmm delicious!
