Thai Chicken Curry with Pineapple

This is a great make-at-home Thai recipe for those of us without authentic ingredients around. I didn't even have fish sauce tonight, and sub'd soy sauce. Assembled a different way, too. Browned cubed chicken breast first, then added everything else. The Thai Kitchen green curry paste is great -- a rounded tablespoon gives a nice kick.

Sunday Gumbo

This was delicious and so easy. I used precooked andouille sausage and a bag of peeled shrimp. Perfect. Sauteed the sausage with the veggies to start. I added brown rice, but it took 45 mins to cook. White rice would shorten the time.

Can't go wrong with butter and sugar! I used about a cup and a half of brown sugar, and put it all in the slow cooker. Worked out well.

This is a great recipe, and easier than it seems at first glance. I used vegetables on hand -- cabbage, carrots, and onion, and doubled the pineapple. I used brown sugar, and might cut back on that next time. The pork was really tasty.

Yummy Bok Choy Salad

A great salad. I didn't use the dark green ends of the greens -- they tend to be a bit bitter. And because I didn't have any chow mein noodles, I crumbled up some dry ramien noodles, and they worked just fine.

Easy Swedish Apple Pie

How can you go wrong with apples, butter, and sugar? It's an easy to make and delicious way to put them all together. I used half brown sugar and half white. A huge hit, so you might want to double the recipe and use a casserole pan!

Oatmeal Raisin Cookies VI

These are perfect cookies. I turn them into health snacks that the kids will even eat for breakfast. I substitute whole wheat flour and about 1/2 cup of flax meal for the all-purpose flour, and mix in whatever nuts and raisins I have. They're not too sweet and just the right texture. Doubling the recipe just fills my Kitchen Aid. I bake about 25 cookies, then roll the rest into logs and freeze. Then we have home-made cook ies anytime we want them.
