Loving husband to Brenda and father to Darci, Derrick, Ryan, and Tara. I was tired of the same old same old for dinner and my wife was burnt out from cooking for us, so I took over cooking and as it turns out, I really enjoy it.
My favorite things to cook
I really enjoy cooking with heavy sauces, wine, and citrus fruit. Seems I am not as good a baker as I would like to be. My favorite cuisine has to be French and Cajun.
My cooking triumphs
My wife had surgery a few days prior to Thanksgiving. I was able to pull off a Thanksgiving dinner for 20 without missing a beat.
My cooking tragedies
Soup. Every one of them. I can’t make a soup to save my soul.

Simple Pork Rib Dry Rub
Sorry, this was way to hot even for a house full of Cajun's. I even cut the pepper and red pepper by half.

Royal Icing III
wow. My 8 year old purchased a gigerbread house kit and the icing was not cutting it. This saved the day. Thank You

Blueberry Quick Bread
Made this for dinner. Used balckberry's in place of blueberry's. Not a single piece of bread left after dinner as a neighbor stoped by and eat the rest. Kids loved it as well. Dont worry about what it looks like going into the bread pan, it comes out perfect.
