One night I made the Zesty Slow Cooker Chicken Barbecue (from this website) for the family and had some chicken left over, so I came back to this website to find something to put the leftover in. It was that fateful day that I found this fantastic recipe and voila! It is handsdown the best chicken salad I have ever had in my life. Since the slow cooker chicken is so easy I just throw it together in the morning, so it is then ready to throw together at night. And the great thing is that it lasts for lunches all week long! It's a MUST TRY!

There is nothing I would change about this recipe. I made it last night for dinner and my husband absolutely loved them. I doubled the recipe and he took the left overs for lunch today. I will definitely be making this again soon.

This dish was absolutely amazing. I did change a couple of things up,however. I took the advice of another reviewer and used one extra cup of sauce instead of using the water. Also, instead of spreading the mayo/cream cheese mixture over the piece of bread, I mixed the mixture together in a large bowl, then tossed the bread pieces around until they were covered. Once I dumped the covered bread back into the casserole dish, I used the same big bowl to mix the meatballs and the sauce together. It dirtied less dishes and saved me some trouble. Both my husband and son couldn't get enough of it and can't wait for the leftovers!

I made this for Christmas dinner this year for my entire family and everyone loved it. Even my brother-in-law who NEVER eats steak ate it and really liked it! This is definitely a keeper.
