Ham Fried Rice

This turned out very well. I cooked rice specifically for this recipe, so I threw some dried chopped onion in with the rice while it cooked. The ginger seemed too strong when I first added it, but after adding the soy sauce (which I doubled), the ginger taste toned down and turned out to be a good ratio. We ate this with fried egg rolls. Next time I will probably add some peas and carrots to the rice.

Cornish Game Hens with Garlic and Rosemary

Because I failed to read the recipe thoroughly before shopping, I ended up making this without all the proper ingredients. However, it still turned out great, and I'll definitely make it again. I didn't have fresh garlic or fresh rosemary. Instead, I combined minced garlic (from a jar) and dried rosemary and placed about a tablespoon of the mixture in the cavity of each hen. Then I added the lemon as specified in the recipe. I used butter in place of olive oil, and seasoned the birds with salt and pepper as the recipe stated. I used apple juice in place of the wine. I was worried that the juice would be a problem, but it added nice flavor without making the meat taste like apples. Because I didn't follow the recipe properly for the birds, I didn't try the sauce. But even with all the changes I made, the hens came out great. I had company for Christmas dinner and they loved it. The carcasses are now simmering down for stock and smell great.

Autumn Apple Salad II

Very good salad. I used two Granny Smith apples and two Gala apples, and I tossed them with some lemon juice before adding the other ingredients. I used pecans in addition to the almonds, and did not have cherries so only used dried cranberries. Will definitely make again.

Super Easy Fruit Dip

This is the standard fruit dip for our family get-togethers. We usually make it with Raspberry White Chocolate yogurt (by Yoplait). It is light and delicious. It tastes great the same day, but doesn't keep very well.

Feta Chicken

Easy and delicious recipe. The flavored feta and chicken are a great-tasting combo. I made this recipe the first time exactly as it's written, but I think it's better without the Italian breadcrumbs. If you really want some kind of coating, I would use homemade breadcrumbs, maybe combined with some seasoning of your choice.

Easy Cheese Ball II

This is very popular each time I make it. Like other reviewers said, make it in advance to allow the seasoning mix to really seep into the cheese. Otherwise, it will be too salty. Also, all ranch seasoning mixes are not the same. I recommend Hidden Valley Ranch. I like to add crisp, crumbled bacon (NOT bacon bits!) if I have time. It's great with sharp cheddar, too.

Bodacious Broccoli Salad

My friend makes this and everyone loves it. She makes hers with halved red grapes (instead of raisins) and honey-roasted peanuts (instead of sunflower seeds).

Mock Champagne

I chose to make this for a bridal shower. I wanted a non-staining punch that was different than the standard slush/punch served at showers. I also made an ice ring of ginger ale with frozen strawberries. Everyone loved it. My best friend and I like it so much that we figured out how to make a pitcher-sized amount for home consumption: 1 litre ginger ale + two 6-oz cans pineapple juice + 1/3 can frozen white grape juice concentrate + 12 oz water.
