Big Soft Ginger Cookies

These are amazing, and keep moist for a long time too. My only recommendation is to use an insulated cookie sheet if you have one. It considerably widens the window between underdone and burnt.

Mexican Chocolate Cake

This recipe was wonderful and INCREDIBLY moist. The only changes I made/recommend is adding more spices. I added a little allspice, nutmeg and chili powder, and it was sooooo amazing. I also topped it with the coffee cinnamon frosting from this site and used chocolate frosting on the sides and inbetween layers. (used two 9X9 cake pans for 24 minutes). Wonderful, thank you!

This cake was absolutely AMAZING! I was scared about making my own frosting, but it was a very simple recipe with incredible results. It stayed perfectly moist for a long time too. Longer if we hadn't eaten it so fast.

Guy Approved Meatloaf

Oh my gosh, this was incredible! I'm not even that much of a meatloaf person, but I am now. Sooooo moist and flavorful. I followed the advice of some of the other recommendations and slathered on a bunch of extra BBQ sauce under the bacon (heaven), used seasoned breadcrumbs instead of crushed crackers (fabulous), upped the spices as I do with everything and only cooked it for about an hour. It was perfectly done, and everyone who ate it was obsessed about getting the recipe from me. Also, for a novice/fearful chef like me, it was super-easy to make, and hard to screw up which is always a plus.

Brazilian Black Bean Stew

This was super yummy and easy to make. The only thing missing is seasoning. When I first tasted it, I panicked because it was bland, but as soon as I added some paprika, pepper and cumin, it really brought out the flavors and was fantastic! This is definitely a keeper.
