I have loved to cook since I was a kid... Like many kids my mom started me out with the cookie cutters and colored sugar during the holidays. Now I find cooking a wonderful creative outlet.

I love to try new things. However, Mexican dishes, family recipes and soups are my favorite things to explore.
My favorite family cooking traditions
Sometimes my husband and I open a bottle of wine and let the festivities began. Sometimes he offers to help me cook. If I don't need/want any help he plays his guitar while I get to work.
My cooking triumphs
Learning that recipes are wonderful! I developed my first recipe for Tortilla Soup. I gave some to the neighbors and they raved about it. They even asked for the recipe!

Easy Chicken Marsala
The Marsala was delicious and I will definitely make it again! I did use some of CatCanCook's suggestions regarding pounding and dredging the chicken (with flour and garlic powder). Like CatCanCook I cooked the meat in the skillet with olive oil and butter. I also agree with her comments regarding more Marsla and less cream/milk a must! I was working with the ingredients I had on hand and was able to substitute fat-free evaporated milk instead of cream/milk (very good). The sauce is so yummy it needs to be doubled or tripled just to have extra to go over the pasta!!! Yummy!

Blonde Brownies III
This recipe is good. Like others I added vanilla, extra chocolate chips and some honey (I was a 1/2 cup short on the brown sugar). I also used combination of all-purpose and a whole grain flours with no noticable change in texture. The only tricky spot was making sure the butter and sugar mixture was completely cool. I thought it was and well... not so much... all my chocolate chips melted! (Up the cool down time!) Luckily, it turned out to be a happy accident because they taste like a chocolately chess pie... Yummy delicious!

Easy Granola Bars
Very very yummy! It is a wonderful alternative sweet treat. For an added health benefit I substituted walnut oil in place of butter and found it to be just as tasty.
