Italian Sausage Soup with Tortellini

Excellent soup! Great change from the norm. My family loves soup and I make a different soup one to two times a week during the winter. I have made this soup and froze the left overs in single serve containers, It freezes well. I have also substituted spinach for the zuchini and it is equally good. My boys even eat it and they are not vegetable eaters.

Classic Cuban Midnight (Medianoche) Sandwich

Excellent sandwich! Even my picky "Boys" at it up and wanted moore. I used some leftover pulled pork from another dinner earlier in the week that had no barbeque sauceon it. It was seasoned with a few spices and it was perfect on this sandwich ! I will surely make this one again !

Slow Cooker Chicken and Dumplings

I will never make chicken and dumplings the old way again ! This was so super easy. They came out creamy and tasted like the recipe I make the hard way. My "Boys" ate three helpings. I did add some carrots celery and potatoes. I just parboiled the carrots and celery so I didn't have to worry about having any extra water from the veggies thinning out the thick creamy gravy and then mixed them in with the cream of chicken and potatoes and dumped it on top of the chicken. It worked out perfect. I will absolutley make this again.

Oatmeal Pancake

I wasn't real sure about this one when I read the recipe but, after I made it I will never eat regular pancakes again! These are so much better for you and I love the nutty texture. I will make these instead of the empty carb pancakes!

Sirecz (Easter Cheese)

This is like the Easter cheese my Nonni used to make only she didn't put the sugar and nutmeg in it. She used to serve homemade pickled beets with hers also. I really like this version! Thank you for the recipe. I will keep the tradition going!

Microwave Oven Peanut Brittle

Roast Pork with Maple and Mustard Glaze

This pork roast melts in your mouth. It turned out very tender, not at all drynad it had excellent flavor as well. Not your average tasting pork roast. (and it doesn't take off the wall ingredients either!)
