Deep Dish Potato and Pumpkin Pie

Not sure if I did something wrong, but no one in my family thought it was a "make again" dish. I did make it without the crust, but based on the other reviews, I don't think that could have been the problem. Feels like it needs something...maybe a splash of cream or more spices?

Delicious Ham and Potato Soup

Super delicious! I used skim milk to slim down the recipe a bit, and it still tasted rich and creamy. Will definitely be making this several times over the winter.

Stuffed Peppers with Turkey and Vegetables

Really tasty! I had never had a stuffed pepper, and I could have lived without the pepper part; it was just ok. The filling was very good, so I look forward to making it in lots of other ways - as a pasta sauce, over rice, in a wrap, etc.

Orange Rosemary Chicken

Pretty tasty! I used 2 chicken breasts but did not reduce the ingredients for the marinade so that I could have some "safe" marinade that had not touched the fish. I thickened the extra marinade with cornstarch to make it more of a sauce consistency. I might use OJ concentrate in the future to get a bigger orange flavor.

Easy Baked Tilapia

I was concerned that this dish wouldn't have any flavor given how easy it was, but the fish and the veggies were super delicious! Definite bonus that it's healthy for you too. Will add it to the regular fish rotation.

Bourbon-Mango Pulled Pork

Super delish! The smallest piece of pork shoulder available at our grocery store was 7.25 lbs, so I increased the cooking liquid by half which was plenty. I removed the excess fat from the pork after it was done cooking. I kept the sauce the same, and they came out saucy enough. VERY tasty! Only recommendation - get a crusty roll that can hold up to the sauciness of the pulled pork. We had soft rolls that were nearly falling apart by the time we were finishing our sandwiches.

Penne Pasta with Spinach and Bacon

I had been making a very similar recipe from Real Simple (BLT Pasta), but this tastes just as good and is a lot easier. Only changes I made were to use whole wheat pasta and Italian style diced tomatoes. I also drained almost all of the bacon grease before sauteeing the garlic to make the dish a little healthier. Very delicious!

Spinach Tortellini Soup

This turned out pretty well. I used fresh spinach rather than frozen. Also, I sauteed onion and garlic in some olive oil which I then put into the broth. Made a really great supper, and tasted great the next day for lunch.

Lemon Barbeque Pork Chops

Based on the reviews, I was excited for how amazing the pork chops were going to be...unfortunately, they weren't anything special. They just tasted like pork chops with barbecue sauce. I may make this again if I am ever in a pinch, but I won't ever plan ahead to make it.

Slow Cooker Taco Soup

Very good! Some changes I made - used black beans instead of chili beans and ground chicken instead of ground beef. We topped with cheese and added chili powder to our bowls to adjust the heat to our tastes. Outside of this sodium (and the added cheese), this is a hearty, healthy meal!

Lime Chicken Picante

Very good! I followed some other posters' suggestions and made 2 batches of the marinade rather than boiling the leftover marinade to make the sauce. About 2 minutes before the chicken was done cooking, I added some thawed Hanover Brands "Latino Blend" to the pan which consists of black beans, corn, onions, and green chiles. It was a wonderful one pan meal!

Cinnamon and Lime Chicken Fajitas

These were super delicious and easy to make! The cinnamon and lime combination is a different, fun way to season fajitas. I'm sure we'll be making this on a regular basis when we are craving Mexican food.

Spinach and Feta Turkey Burgers

DH was sweet enough to make this while I was on my way home from work, and I was pleasantly surprised with the results when I arrived home! He made 2 small changes: egg beaters replaced the egg, and he accidentally put in 2x as much spinach as the recipe called for. Even with the extra spinach, the burgers tasted really great! I'm thinking about turning the leftover meat mixture into meatballs for tomorrow night - yum :)

Actually Delicious Turkey Burgers

These are actually delicious! I've made them a couple of times, and I sometimes throw in Worcestershire sauce and seasoning salt for a little extra kick. Also makes yummy meatballs!

Southwestern Vegetarian Pasta

Really delicious and super easy to make! I didn't have enough chili powder, so I'm looking forward to making this recipe when it has enough "spice" in it. I used whole wheat pasta and reduced fat cheese, which made this recipe pretty guilt-free.
