Beef Nacho Casserole
This was awesome! I used taco seasoning instead of chili powder & used fritos instead of tortilla chips. The whole family loved it!

Pesto Shrimp Pasta
This was very good. I used store bought pesto and added some heavy cream to it. It turned out great. The whole family loved it.

Smothered Mexican Lasagna
Omg....this is soooo good. I added the refried beans and the cheddar/jack cheese & it turned out sooo good. My whole family loved it. It tastes even better the next day!
