Incredibly Cheesy Turkey Meatloaf
This was delicious. I made it this way: 1 lb turkey 1/2 c milk 1/2 c + 1/4 c bread crumbs 1 egg 1/2 tsp salt @ 1/3 lb cheese, shredded 2 small onions 1 carrot a little celery some broccoli stems I blended the veggies in the food processor to make them nice and small. I took the advice of another reviewer and mixed the 1/2 cup of breadcrumbs into the milk to plump them, then I added the other 1/4 cup later to help bind it together since I had added all the veggies. The cheese gave it a nice richness, but since it was shredded it wasn't the main feature. We really enjoyed it made this way, and my husband wants to have it twice a month! :-)
