You know how you're always looking for just ONE really good recipe for a particular item and then you say you'll stick with it? This is it for cornbread! The recipe is simple and produced great results as followed. If you're using regular all-purpose flour it really only needs 30ish minutes to bake. I think 40 would dry it out. I didn't even use a sauce pan, but rather melted the butter in the microwave in a large bowl, and then let it cool on the counter a bit before I mixed in the eggs and other ingredients. I also didn't have buttermilk, so instead used regular milk with a splash of apple cider vinegar, and it turned out fine. This base recipe is so good it would be fun to experiment with other additions. Perhaps cheddar, fresh corn, bacon crumbles, jalapenos...
