I loved roasted veggies, and beets are no different! I didn't have shallots, so I used so finely diced onion. I also didn't have any red wine vinegar, so I left that out. I added a handful of toasted walnuts because I thought the crunch would be nice and the flavor would complement the beets and feta. I was right! Yummy!

The Very Best Confetti Rice

I thought this was pretty bland. I ended up adding the juice from the orange I zested, garlic powder, soy sauce, and salt/pepper. It was then a little more interesting.
