Rich and Creamy Tomato Basil Soup

Pretty good recipe. I think it could have used some diced, sauteed onion or something in it. But it was super easy and delicious with grilled cheese.

Bran Muffins a la Brian

Delicious recipe! I used honey instead of molasses. While the muffins were warm out of the oven, I added a teaspoon of a combination of honey, melted butter, and brown sugar to the top of each one. Kept them moist and gooey and delicious. Thanks for the great recipe!

Shrimp Scampi V

Absolutely LOVED it! Cut wine in half and used 1/2 cup chicken broth. Also, red pepper flakes. Salt/Pepper and this is the BEST! Bland? C'mon people, season your dish! :-)

Sweet and Sour Chicken I

The sauce for this was delicious. The only change I made was I added about a tablespoon of honey. I used grilled chicken instead of deep fried, which was delicious with grilled onions, peppers, and pineapple over rice. Thanks so much for the recipe!

Mom's Zucchini Bread

The best zucchini bread I've ever made. SO good. The cinnamon taste is perfect, and not at all overwhelming. I made two minor changes. I don't like nuts, so I used chocolate chips instead. And I baked in a 13x9 inch casserole dish instead of two loaf pans. Turned out perfectly. I brought it in to work and had TONS of requests for the recipe. A tip: Don't "drain" or try to dry out your zucchini. The zucchini is what gives this bread a lot of moistness. Thanks for the recipe, this one is a KEEPER!

Chicken Parmigiana

This recipe was just "okay" in my opinion. I don't like using the jarred spaghetti sauce, and the breading really wasn't thick enough. Also, I never put the breaded chicken swimming in the sauce when making chicken parmigiana. It's a really good way to turn your breaded chicken into soggy chicken. Instead, I just assemble it, and let the cheese melt on it's own. I will say one thing for it, it was quick and easy.

This cheesecake wasn't bad. I followed the directions exactly, as I have been searching for a recipe that I had in an old cookbook and can't find anywhere. This was pretty close, but there are better cheesecake recipes out there.

Sausage Stuffed Mushrooms II

Ymmuy! I added four cloves of fresh minced garlic and about 3 green onions to the mix, and it was AMAZING. I also added a little salt and pepper. Everyone was going crazy over them. I had to broil them a little longer than the recipe stated, about 5-6 minutes. That might just be my oven though.

Chocolate Dipped Orange Biscotti

Good stuff. I added 1/2 cup more flour,ommitted the orange extract, and instead added some vanilla and almond extract. I added kahlua, a Tablespoon of heavy cream, and a Tablespoon of instant coffee mix to the chocolate while it melted over the double broiler. Super easy recipe and GOOD!!!

Incredibly Cheesy Turkey Meatloaf

This was just o.k. The texture turned out a little mushy, like dog food. I added some italian seasoning and garlic, as well as a chopped onion, worchestire sauce, and I grated my cheese rather than cubing it.

Brownie Caramel Cheesecake

Pretty good. I made this for a Thanksgiving dessert this year. The only problem I had with it was that the brownie crust was a bit overcooked and hard to cut through, since it has to go into the oven twice. It was still a hit, and I will try it again!

Baked Slow Cooker Chicken

I have made this chicken several times, and I love it! It is absolutely perfect for a working couple, we even serve it when we have people over for dinner. I just get up in the morning and sprinkle the chicken with salt, pepper, and paprika, put the crock pot on high for an hour to brown the skin, then turn it on low for the rest of the day! By the time we come home from work we can smell that dinner is ready! We serve it with brown rice (Cooked in chicken broth) and use some of the drippings from the crockpot over the rice. SO GOOD!

Delicious! I used one more roma tomato than advised, and red onion. I also added a little bit of salt and fresh ground pepper. The cayenne pepper really gave it a kick! It was a huge hit at my husband's poker night! Thanks for the great recipe!

Bread Machine Bagels

AMAZING!!! These bagels were so delicious and so easy! Everyone was so impressed with them-- probably because making bagels sounds so intimidating! I used my Kitchenaid mixer for the dough instead of my bread machine, and after the dough was done, I folded 3/4 cup of shredded cheddar cheese and 5 cloves of minced garlic into the dough before shaped them and let them rise again. Absolutely DELICIOUS with cream cheese! I will be making these again and trying other flavors, blueberry and cinnamon raisin are next! Thanks for the great recipe!
