This is fantastic. Made mine vegetarian by using veggie broth, veggie bouillon and topped with crumbled veggie bacon. Will be making again soon!

Cottage Cheese Pancakes

These remind me of the cottage cheese pancakes my mom made when I was a kid. Definitely blend in a blender for a smooth texture. Also, you may want to double the recipe. My 4 and 2 year old ate most of them. YUM!

Baked Tofu Bites

These were great! I omitted the liquid smoke and served them over brown rice. I gave them to my toddler and he ate them up! I stirred the leftovers into some Mac N' Cheese the next day, total comfort food!

Lemon Chicken and Rice

This was a good simple meal. Very much comfort food. I made mine vegetarian by using a bag of Morningstar brand Chic'n strips and veggie broth. Added lots of black pepper and a couple tablespoons basil pesto. Thanks for the recipe!

Cinnamon Apple Coffee Cake

This was really good. Make sure you only use half of a cake mix, I almost used the whole box before I realized it only needed half. Also, the recipe says "pour" batter into pan and it really is "spread". The batter is really quite thick. Very good recipe!

Peanut Butter Kisses I

These are amazing. I will make them again and again when I need something sweet and quick. My 2 year old helped me with the hand mixer while beating the egg whites. Yum!
