Peanut Butter Noodles
For those with nut allergies or are cooking for someone who does, I used Sunflower Seed Butter (from Trader Joes)instead of Peanut Butter. No one could tell and it was quickly gobbled up. If you like extra sauce or plan on adding protein (chicken, shrimp) to the sauce, I suggest tripling the recipe. I doubled it, added shredded chicken and barely had enough sauce to cover the noodles. I served this over capellini. Very good and so easy!
