Delicious Chicken Casserole
This was pretty good. I did 1 can cream of celery, 1 can cream of chicken, omitted celery and celery salt. I added half a bag of frozen broccoli florets...I think you definitely need some sort of veggie in there. I used the 4 breasts and added 1 more cup of cooked rice. Could have done with another cup, I think. It was creamy but not thick, and more rice would help thicken it up a little. Easy ingredients that I have on hand so I'd probably make it again.

Mediterranean Greek Salad
This is GREAT with some adjustments. I find that 3 cucumbers is too many; I use 2. And to make it more colorful, I peel the cucumber in stripes, leaving some of the skin on. For the dressing, I added 1/2 tsp oregano, 1 1/2 tsp lemon juice, 1 tsp red wine vinegar, and salt & pepper to taste. It's really a light & easy salad, and very tasty! Definitely use Kalamata olives, they make a world of difference. Make it, but just make it my way. :)

Annie's Fruit Salsa and Cinnamon Chips
Love this recipe! I didn't add any sugar OR preserves to the fruit salsa. It was perfect without it. I added blueberries and may add some crushed pineapple the next time. I followed someone's suggestion and put the sprayed tortillas in a bag with cinnamon sugar and shook it up. You may need to put some more sugar on after you place them on the baking sheet. Do NOT overlap the chips or they won't bake well. They do continue to cook after removing them from the oven. Have fun!
