Artichoke Spinach Lasagna
I served this to guests and they ate almost all of it and then begged for the recipe. And it was so easy! You don't have to boil lasagna noodles -- just soak them in the sink in hot water for 20 minutes -- a wonderful shortcut on a hot summer day. I didn't have vegetable broth, so used chicken broth. At room temp this tastes just delicious, so would be a good thing for a potluck.

Brazilian Black Bean Stew
What a terrifically easy thing to throw together -- and it tastes like you've spent hours! Next time I might leave out the ham and double the chorizo, which really gives this a nice punch. I used a just-ripe mango. It was easy to peel and held together beautifully after cooking. Just loved the sweet/hot contrast in this delicious stew.

Blueberry Gingerbread
I made this for a friend who loves gingerbread and he gave this an "A." I used frozen blueberries and served it warm with whipped cream. This is a delish and easy dessert and it's not cloyingly sweet -- I'll make this again. Would be great with a cup of hot tea on a rainy afternoon, too!
