Brazilian Black Bean Stew

Delicious and different. I think people who called this bland may have used a can of diced tomatoes with mild green chile peppers instead of a can of tomatoes with hot green chile peppers. I didn't think any extra spices were necessary. But then again, I didn't try to replace the chorizo with anything--and chorizo has some wonderful spices in it. I think the amount of mango in the recipe should be increased if your mangoes are not super sweet. I used three semi-sweet-tasting mangoes, and I could have used more.

Chicken Tikka Masala

Used a total of 1 tsp salt. Cut cayenne to 1/2 tsp and used 1/8th of a jalapeno--still spicy enough for me and my husband and a little spicier than my toddlers prefer. This is the closest we have come to replicating restaurant-style Indian food.

Belgian Waffles

Lime Gelatin Salad

I really can't believe this recipe doesn't have more reviews! It is one of the best Jell-o salad recipes I have tried--perfect to bring to a family or church gathering. It's simple to make and pleases everyone. It only needs to chill for about 15 minutes before adding the whipped topping. I used a small can of mandarin oranges and more crushed pineapple because that's what I had on hand. This recipe is going into the entertaining file!

Chicken with Green Peppers in Black Bean Sauce

Okay, the secret to toning down the saltiness of this dish is to omit the salt, chicken bouillon, and the soy sauce. Then increase the water to 1 cup. Use 1 1/2 Tablespoons (4 1/2 teaspoons) cornstarch dissolved in 1/4 cup additional water to thicken. Also, stir in 1 teaspoon sugar. Without so much salt, this is delicious.

I used fresh-squeezed orange juice and less cream. It was delicious. The texture was interesting, very spongy. I'm glad I tried this, but I'll probably stick with Jell-o for family functions.

Fiery Fish Tacos with Crunchy Corn Salsa

I was excited to try jicama for the first time. I was disappointed in this recipe, and I think it was mostly because of the flavor of the jicama in the salsa. Now that I think about it, many reviewers mentioned that they couldn't find jicama in the store and omitted it. I think this recipe would be much better without it. The tacos were also a little dry. I will keep searching for the perfect fish taco recipe.

Authentic Louisiana Red Beans and Rice

I didn't want to spend money on cajun seasoning at the grocery store, so I made a small batch of Emeril's "Essence" cajun seasoning: 1/2 tsp each of salt and garlic powder, 1/4 tsp each of black pepper, onion powder, cayenne pepper, dried oregano, and dried thyme. The amounts add up to 2 1/4 teaspoons of spice. I used 1 tsp as directed in the recipe. Next time I may use the entire amount. Thanks for a wonderful recipe!

Oklahoma Cheese Grits

Too much butter, salt, and cheese. I also was not crazy about the worchestershire sauce taste. I prefer stovetop grits with a little butter, cheese (not processed), and hot sauce. However, I did enjoy the texture provided by the egg.

Banana Nut Muesli

This was mt first time making a soaked muesli. I read up on muesli before making the recipe and made a couple changes. First, I used old-fashioned oats in place of quick-cooking oats for a better texture. I was worried about the oats getting mushy, but they held up better than I expected. I also replaced the water with milk. When oats are soaked in milk, they flavor it and create a tasty "oat milk." I was worried about the bananas turning nasty overnight, but they were still firm and also gave the milk a nice taste. I will make this again.

Butter Chickpea Curry

Absolutely a five-star recipe with the suggestion of diced tomatoes and a couple tablespoons of tomato paste in place of the tomato soup. However, I would not replace the potatoes with cauliflower (as some users have suggested) without trying the recipe with potatoes first. I think chickpeas are meant to pair with potatoes in a curry. To add to the "butter" flavor, I replaced the oil with butter and used a sweet onion. I could eat this every week for the rest of my life.

This is one of my favorite fish recipes! A time-saving hint: you don't need to marinate fish longer than 30 minutes, according to professional chefs. Marinades penetrate fish faster than they do meat.

Easy Morning Glory Muffins

Used 1/2 cup crushed pineapple instead of an apple. Also used 1/4 cup brown sugar and 3/4 cup white sugar, 1/4 cup oil and 3/4 cup applesauce. Would be delicious with a cream-cheese frosting. These carrot-cake muffins are divine!

Butterscotch Oatmeal

I am giving this recipe a four-star rating because it has way too much sugar and butter as written, but it is one of my all-time favorite recipes. My children call it "oatmeal pudding" and request it at least twice a week for breakfast. I use 2 tablespoons brown sugar and no butter. I make it like rice pudding by adding raisins, cinnamon, and a little vanilla. Delicious.

Banana Pancakes with Berries

Absolutely delicious! If you don't have buttermilk on hand, you can mix one tablespoon of lemon juice with the cup of milk and let it sit for 10 minutes before adding it. I used brown sugar in place of white, and I added some cinnamon and a dash of nutmeg. I have fond memories of my mother making banana pancakes when I was a child, and I like these even better. What a brilliant idea to put the banana slices on top of the batter after it is poured--the caramelization is divine. Will make often for my kids!

Aji de Gallina

I was very happy to finally find a recipe for aji de gallina. This was great, but an entire loaf of bread was too much--the end product was way too thick and tasted like white bread. Next time I will try half a loaf. I also doubled the aji for more flavor.
