Chicken Cordon Bleu II
So YUMMY! This was a big hit with the family. The sauce really makes the meal so I would recommend making more. I put the chicken in the broiler for a few minutes after taking it out of the pan. It gave the chicken a nice crispy skin. This is a keeper!

Eggplant Parmesan II
I really enjoyed this recipe. The flavors are amazing. However, I had a difficult time getting the bread crumbs to stick. I also baked the eggplant for 10 min. on each side and then broiled for 2 min. It makes the crust a little crispier.

Chicken Tortilla Soup I
Excellent recipe! My family LOVES it. I will defiantly be making it again soon. Next time I will leave out the cilantro and let everyone add their own.
