Baked Teriyaki Chicken

We really enjoyed this dish. My son said,"I don't usually like chicken thighs but this is exceptionally good!" When I was making the sauce, I found it a bit strong but it was delicious on the chicken. I had to drain the liquid from the dish a few times while it was cooking to allow it to brown. I put it under the broiler at the end also.

Sweet and Sour Sauce II

Really delicious although I did make a few changes. I used the juice from the canned pineapple and water instead of just water. The thought of tomato paste didn't appeal to me so I used about 4 Tbsp of ketchup. I also used brown and white sugar (and only 3/4 of a cup) and added some fresh ginger. Yummy!

Southwestern Turkey Soup

One of my favourite soup recipes! Great to use with leftover turkey or chicken. I don't usually have veg. broth on hand so I always use chicken broth. Super quick and easy to make. Avocado and fresh cilantro make this soup outstanding! Be sure to try this one!!

Bow Ties with Sausage, Tomatoes and Cream

A nice change from pasta with tomato sauce. I agree that there seemed to be to much sausage and will reduce it next time. I didn't cook the sausage in the oil. I added 1 28oz can of whole tomatoes(chopped), sauce and all and my own blend of Italian spices. I did not have heavy cream so I used 1/2 cup cream cheese and 1 cup 2% milk. Any pasta will do. It was so delicious!!

Poppy Seed Dressing I

I thought this was terrific, with a few changes. The thought of fat free Miracle Whip did not appeal to me. For full flavor, use the real stuff. Hellmann's Real Mayo is the best! I also used less sugar and less poppy seeds. Turned out great! Much better than store bought.

Pork Tenderloin alla Napoli

I am not a big fan of olives but thought I would try anyhow as my husband loves them. I did not have fresh tomatoes so I used about 2/3 cup of canned tomatoes. I also used whole milk instead of cream and a bit of flour to thicken. Make sure you brown the p.t. in a cast iron or stainless steel skillet. Don't use non-stick. It really does make a difference. Will double the sauce next time. ***Delicious!!**

Aussie Chicken

My absolute favorite chicken recipe! I barbeque the chicken and sauté the mushrooms. I also slice the chicken, but not right through, before adding the delicious sauce to allow it to soak in. I have also served it on ciabatta buns. A must try recipe!

Famous Chicken Francaise

In the end this was very good. After coating the chicken, I refrigerated it for about 30 mins. This helps to ensure the coating with stick once you fry it. I put the chicken in the oven to finish cooking while making the sauce. The sauce seemed a bit bland so I added some sugar as well as some cornstarch to thicken. I added the chicken to the pan only for a few minutes before serving. Any longer and the coating is likely to flake off. Next time I will try using half white wine and half chicken broth as well as some sautéed garlic and ginger for the sauce.
