Cookies 'n' Creme Fudge

I've always stayed away from fudge recipes because they intimidated me. This recipe is so simple and so good. I followed it to a tee, and it came out perfect. I've never had much of a sweet-tooth, but this is really good. It has the smoothness of fudge, with the crunch of Oreo cookies. Five stars and highly recommended!

Pillow-Soft Dinner Rolls

These are so good, but there is way too much liquid for the amount of flour called for. I had to add over a cup of extra flour just to work the dough. The next time I made them I left the water out and only used the milk, and the liquid to flour ratio was perfect. Mine were done in 16 minutes, but my oven runs hot. Five stars and highly recommended!

Cherry Pie IV

I used my own crust recipe, so this rating is just for the filling. Other than cutting the recipe in half (just my wife and I) I followed the recipe to a tee. This is the best cherry pie I have ever had! The balance of sweet and tart is perfect. Baked it in a 6 inch pie pan for 45 minutes. Five stars and highly recommended!

Bill Clinton's Lemon Chess Pie

I love anything with lemon in it, and this recipe has all the lemon flavor and taste you could ask for. I followed the recipe to a tee the first time, but found it way too sweet, to me. I made it again and cut the sugar in half and it was perfect. It has just the right balance of tart and sweet with a custard-like texture. 5 stars and highly recommended!

Strawberry Spinach Salad I

This salad is very good as written, but as others have noted it is way too sweet. I made it again and cut the sugar in half, added a cup of crumbled feta cheese, and it was to die for! Five stars and highly recommended, just watch the sugar.

Scalloped Potatoes and Onions

I followed the recipe to a tee other than subbing sour cream for the mayo, and adding 1 cup of shredded cheddar cheese to the top. My wife said this was the best potato dish she'd ever had, and she's a potato-aholic! Baked for an 1 1/2 hour at 350º. Five stars and highly recommended!

Brigid's Blackberry Pie

I've made this recipe several times, and with a little tweaking it is to die for. I had to add more flour each time to keep it from being too runny (maybe my berries are juicer), and the cooking time seems to be off. 1 hour at 350 degrees instead of 325 was about right for my oven. Other than those 2 changes I followed the recipe to a tee. Thor and I have put on a few pounds thanks to this recipe, but who cares. 5 stars and highly recommended!

Easy Vegetable Pot Pie

What a great little recipe! I've tried several veggie pot pie recipes from this site, but this one is the best. Followed the recipe to a tee other than omitting the egg wash and subbing sage for the thyme. I also tried it with cream of celery soup, but it's better with cream of potato. 5 stars and highly recommended!

Sweet Potato Pie I

This was my first experience with sweet potato pie, and it turned out good as written, but it was way too sweet, to me. I made it again cutting the sugar in half and using evaporated milk, and it was to die for! 5 stars and highly recommended!

Yellow Squash Casserole

I've never made a squash casserole before, so I thought I'd give this one a try. I see now why it's so highly rated. Followed the recipe to a tee and it was good, but precooking the squash made it mushy, to me. Made it again without precooking the squash, added a tbs. of minced garlic and it was to die for. Five stars and highly recommended!

Potato Bread II

I'm a breadaholic, and this is one of my favorite breads! I followed the recipe to a tee, then added 1 tbs. of fresh rosemary, a 1/2 tsp. of lemon pepper and that made it all the better, to me. Didn't use a bread machine, instead I let it mix and knead for 5 min. in my KitchenAid. Let it rise for an hour, punched it down, then let it rise again for 30 min. Baked it for 25 min. at 400 degrees. Bread goes excellent with the "Mushroom & Potato Chowder" from this site. The bread is five stars and highly recommended!

Vegetarian Sweet and Sour Meatballs

These are so delicious, and so easy to make. I followed the recipe to a tee other than reducing the ketchup to 3/4 cup (as others suggested), and omitting the sage (seemed out of place). I served them to my 83 year old dad, and he never knew they were meatless! Next time I will double the sauce and serve them over rice. Five stars and highly recommended.

Real Southern Cornbread

I've been looking for a cornbread recipe like my mother made when we were kids, and this is it! I cut the amount in half, and it fit nicely in my 8 inch skillet. I followed the recipe exactly and it made true, southern cornbread, with the buttermilk adding a nice tang to the taste! I did, however, find the texture and crust to be too "cake-like." I made it again, but changed the cornmeal to flour ratio from 1:1 to 2:1 (more cornmeal and less flour) and it was perfect, to me. Served it with a pot of brown beans and I was in heaven. If you like your cornbread unsweetened, then this is the recipe for you. Five stars and highly recommended!

Bruschetta I

I made this with fresh basil from my herb garden, and it is to die for. Followed the recipe other than adding 1/4 cup of olive oil and an 1/8 cup walnut pieces. Also minced the garlic and added it to the pesto and topped with shredded Parmesan cheese. I only got 8 servings, but I spread the pesto on pretty thick. Fresh basil is a MUST for this recipe. Five stars and highly recommended!

Luscious Lima Bean Soup

I'm a soupaholic, and this is one of my favorites. I followed the recipe other than subbing 1 cup of chopped onion for the leek and shallots. I added a 14.5 oz. can of diced tomatoes, an 8 oz. can of tomato sauce and a tbsp. of minced garlic. This soup is even better the next day. Five stars and highly recommended!

Veggie Brown Rice Wraps

Being a vegetarian, this recipe caught my eye. The first time I followed the recipe to a tee, and it was good. The next time I subbed white rice for the brown, pinto beans for the kidney, added the salsa while the mixture was cooking (then ladled more on when serving), and 1/2 tsp. taco seasoning (from this site), and it was to die for. A quick, delicious recipe that is five stars and highly recommended!

Orzo and Tomato Salad with Feta Cheese

A very tasty recipe, and with tri-colored orzo, red tomatoes and green olives it's very colorful, too. I followed the recipe to a tee except cutting the oil back to an 1/8 of a cup, only used 1 tsp. of dried dill and omitted the parsley altogether. I let it chill overnight, and the flavors melded nicely. A five star recipe that is highly recommended!

Roasted Garlic Tyrokavteri

This recipe immediately caught my eye because of the roasted garlic and the roasted red peppers; two of my favorite things to cook with. I followed the recipe to a tee the first time, and while it was good, the amount of lemon juice overpowers everything else in the recipe! I think the lemon juice amount may be a typo. Anyway, I made it again and cut the lemon juice to a 1/4 cup, increased the roasted garlic to a 1/3 cup and left out the half & half (it didn't really need it, to me), and it was to die for. Five stars and highly recommended, just go easy on the lemon juice.

Apple Enchilada Dessert

This is such a great recipe; minimum prep time and maximum payoff. I followed other reviewer's recommendations and cut the water in the sauce to 1/3 cup, which worked well. I also increased the baking time to 40 minutes as others have suggested, but that was a mistake. It gave the tortillas a crispy top, but it turned the filling to rubber. I made it again, baking it for 20 minutes as per the recipe's instructions, and it was much better, to me. A great Mexican dessert. Five stars and highly recommended!

Fat Free Refried Beans

This is a great recipe, but as others have noted it needs some help. I subbed pinto beans for the black beans, and I think the 2 cups it calls for is a typo, it should read 2 cans. Also, 1 tsp. liquid smoke is way too much, a 1/4 tsp. is enough. I rinsed and drained the beans, added 1/2 tsp. garlic salt, 1/2 tsp. cumin and 1/2 tsp. ancho chili pepper. I reserved 3/4 cup of the beans, then coarsely chopped the rest with my immersion blender. I added 1 cup vegetable broth, along with the rest of the ingredients, then let it cook down to a thick consistency. Tasted just like the real thing without the calories and fat. With changes it's a five star recipe and highly recommended!
