About this Cook
I'm a stay at home mom, with two kids: Ella, who is two and a half, and Jack who just turned one. I'm currently just trying to find quick, cheap meals that taste great, are kid friendly, and make great leftovers. Also, dairy-free recipes, as my son has a milk allergy now (hopefully he'll outgrow it soon!) My new goal is to perfect homemade bread without the use of a bread machine, but those recipes are hard to find on this site!
My favorite things to cook
Hands down dessert, specifically cheesecakes. Hearth breads are also up there on my favorites, since they're getting better and better as I learn more and more the right tricks. And, oddly enough, my slow cooker pot roast is a favorite to cook since it's easy, smells great all through the day, and seems rather fancy with it's red wine and thyme.

Shredded Beef Chimichangas
Very good! I was nervous at first because I cooked my meat in the crock pot and it smelled awful for the whole 6 hours, but surprisingly, the end product was delicious!! I added refried beans to the tortillas with the meat and they were very filling. I don't think there's anything I can do about the smell, since I followed the ingredients to a T, but I will be making this again for sure!

One Bowl Chocolate Cake III
This is the best chocolate cake ever! I was a little nervous because I had to make it dairy-free (with a soy-butter chocolate frosting) and it turned out fabulous! It's the kind of cake that would be wonderful even without the frosting. And super easy to make. Thanks for the great recipe!

Chicken Pot Pie IX
My family loves this recipe!! Because my son has dairy allergies, I used soy butter and rice milk with a little bit of cornstarch and we couldn't even taste the difference. It wasn't too runny either. Also added leeks, potatoes, and a splash of white wine. Delicious!
