Creamy Hot Chocolate

Really good. I used 2% milk instead of the water, and Ghiradelli chococlate bars instead of the cocoa - one 60% cocoa and one 100% (unsweetened). (I doubled the recipe.) I did end up adding more cocoa powder, though, because it didn't seem chocolatey enough in color. I did it all in a crock pot for my caroling party and everyone loved it!

Zucchini Bread VII

Great bread. I have made it several times, with great results. I have been adding about a cup of chocolate chips, 1 tbsp. cinnamon, 1/2 tbsp. nutmeg, and 1 tsp. allspice. Also, it is a little bit oily - very moist, but oily - and so I may try subbing some applesauce and cutting back on the oil. I also use fat-free sour cream - works great!

Zucchini Boats on the Grill

Yum! I made my husband make this, much to his dismay, but he loved it! We added ground beef to the stuffing, and cooked the extra stuffing in the oven - great for lunch.

Baked Spaghetti Squash Lasagna Style

Good. This was my first experiment with spaghetti squash. It was very pretty served in the shells, and good flavor. The tomato sauce was really easy - I added mushrooms, red wine, and used fresh basil and oregano.

Oh wow, yum. Made it for a big group of friends, everyone thought it was incredible. I added a blueberry sauce and a rum sauce (both from this site) and it was just incredible. Even good the next day!

Mushroom-Stuffed Tenderloin

Yum, yum, yum!! This was fantastic!!! My brother said it was the best thing I've ever cooked! As suggested, I doubled the stuffing, and tied it with butcher's twine rather than using toothpicks. The crust was a nice addition, not too thick, and the stuffing and meat were just wonderful together. I will definitely make this again!

Butterscotch Rum Pound Cake

Yummy! Not really pound cake, more of a Bundt cake, but still great. My only issue is that it fell apart when I unmolded it - make sure you cool it completely before removing it from the pan.

Sesame Pasta Chicken Salad

Really good. I sauteed the chicken in sesame oil, too, which gave it a really good flavor. It was slightly too oily for my taste...I would reduce the oil a little next time.
