I am a stay-at-home mama who has recently learned that her high cholesterol and sugar cravings needed to go. This has sent me on a quest for perfectly delicious along with perfectly healthy dishes.
My favorite things to cook
I love spicy foods, so trying dishes from indian to mexican work nicely with my already developed cajun palette.
My favorite family cooking traditions
Spicy New orleans cuisine is an obvious one. Also, my amazing step-mom bakes without ceasing, so must I!
My cooking triumphs
I moved to NYC for a few years (to act) and was very homesick for all things New Orleans. I began making big pots of red beans and rice for my friends with much praise. I took a vacation to Fla. with mom and made them for her. She declared they were "better than hers."
My cooking tragedies
In an effort to get more whole grains in my diet and satisfy my sweet tooth, I began experimenting with cookie recipes. Two words that do not go together: whole wheat and chocolate chip cookies.

Caramel Macchiato Cheesecake
Want a LOWFAT LOWCARB version? I used a crust of 1-1/2 cups toasted pecans, 2 tbl soy flour, 2 tbl Splenda ground in food processor. Add one egg white. Press in pan and bake 350 for 15 minutes. (Blaine's Low Carb Kitchen recipe) For the filling, I used lowfat cream cheese (One 8 ounce pkg.), lowfat sourcream (8 ounces), one egg, 1/3 cup sugar. For the topping, I took sugar free cool whip and mixed in a little caramel syrup and layered it on thick. YUM!

Broiled Tilapia Parmesan
Why bother adding ANOTHER five star rating? For all of you into LOWFAT cooking, I subbed naturally lowfat buttermilk instead of mayo. Came out great. (According to South Beach, fat-free mayo should be avoided due to carbs.)
