Chicken Tortilla Soup V

Quick, easy and delicious. I do make another recipe for Chicken Tortilla Soup that I like better, but it uses more ingredients, and can be a pain in the butt to make. This recipe is easy to make, and fairly cheap. Enjoy!

Creamed Spinach II

I agree with the last poster. It tastes like spinach and mushroom soup. I think if you have had creamed spinach before, and really liked it, then you will probably like this. I had never had creamed spinach before, and will probably never again. It just seems "blah" to me. I would rather use the spinach for a salad, or just with butter and salt, otherwise I am wasting my calorie intake!

Chicken And Apple Curry

This was good. It tasted like I was putting the top rated (on this site) Mulligatawny soup on rice. It has the exact same flavor. It is a little bit bland....maybe some cumin would help with this?

Oatmeal Peanut Butter Cookies

These were great. I agree with other posters, you need to add 1/2 cup extra of oats in order to make them perfect. I also added a little bit of cinnamon to bring out the flavors more.

Naan

I make this naan all of the time. It is definitely a go to bread in my family. You can add all sorts of spices to it. My personal favorite is sprinkling about 2 tsp of curry into the mixture to make a curry naan. The garlic powder is really great to, but I add about 1 tsp more than the recipe calls for.

Baked Dijon Salmon

This is really great. I followed the recipe exactly. The only suggestion I would make is to marinate the salmon in the dijon mixture for a couple of hours prior to baking. The soak up way more of the flavor this way.

Chicken Makhani (Indian Butter Chicken)

This was fantastic. I suggest using 1/4 cup extra of yogurt. I also used milk instead of cream (just to cut the fat) and it still turned out awesome!! My husband wants me to make this for him every week!

West African Vegetable Stew

My husband liked this. I liked it too, but for me, it was not one of those soups that you can keep in the fridge for long. The potatoes become too mushy, and the raisins plump up too much.

Zucchini Brownies

These were delicious. I got a little stir crazy and did not seperate the ingredients prior to stirring, which caused pockets of flour throughout the brownies. The only downfall about these is that if you are craving a super rich brownie (aka, loads of butter), you may be disappointed. I think this is a good brownie recipe if you like to have a treat around the house, but if you are looking for something when you have a craving these may not fit the bill.

Dad's Pad Thai

I was not impressed with this pad thai. Although the ingredients are common, and it is relatively easy to make, if you are expecting a flavor like "real" Pad Thai you won't get it here. Unfortunately, if you want that authentic taste, you need to use authentic ingredients. The flavor of this recipe was tart (because of the excess lime juice), and slightly bland (boring). I would not recommend this recipe if you have tried good pad thai before. If you are a first time taster, you might enjoy it.

Hot Crab Dip

Really great. I halfed the recipe and my husband and I ended up eating the whole thing. In that regards, perhaps you should double the recipe if you are planning on serving it to more than 10 people.

Chicken Breasts with Balsamic Vinegar and Garlic

Amazing! I am a vegetarian so I made this recipe using portebello mushrooms (I treated them as if they were chicken). They sauce is sweet and savory, and not over powering. My husband ate the chicken version and loved it. He told me that this one is a keeper.

Best Chocolate Chip Cookies

I can honestly say that these are the best chocolate chip cookies I have ever made. I followed the recipe exactly, except for dissolving the baking soda (just blended it with the flour beforehand). My husband couldn't stop eating them. My only suggestion is to reduce the baking time so as to keep them chewy/ soft, rather than crispy.

Oatmeal Peanut Butter Cookies III

I enjoyed these cookies. They were among the better ones I have made. I did however find them too cakey, rather than chewy (the way I typically like oatmeal cookies). Because of this, the frosting seemed to blend into the cookie and it was hard to distinguish the two. next time I will omit the baking powder, or decrease it and hopefully this will aid in a less "fluffy" cookie.

Homesteader Cornbread

This cornbread was good, but I like a sweeter cornbread personally. It was also too dense for my liking, whereas I like a more fluffy cornbread. There is definitely better cornbread recipes than this one, so I would try another one first.

Delicious Raspberry Oatmeal Cookie Bars

I found this bar to be somewhat dry. Make sure you add the bulk of the crumble underneath the jam or else there will be too much crumble on the top and it will fall apart. If you use a bit more butter it makes it so it sticks together better. For the jam, make sure you use a really good, chunky, raspberry jam. It tastes a little too artificial otherwise.
