Swedish Toscas (Swedish Almond Tarts)
These were easy and adorable! The dough was a little crumbly to put in the muffin tins, but stayed together once baked, no problem. I didn't have trouble getting them out of the muffin tins. Just coaxed out with the tip of a knife. I thought maybe they could have used a bit more filling so next time I might make 1.5 times the filling and see how that works. I will make again for sure!

Breakfast Sausage Roll
My family loved this! I halved the recipe for the 3 of us and we still had some left. I used 1 lb. sausage. I added celery, which I sauteed first and added to the previously cooked sausage. I also sauteed fresh mushrooms and finely chopped red pepper before adding to the sausage mixture. I made it jellyroll style and it was good, but I may make calzone style next time. We had it for dinner but it would be great for any meal.

Cajun Chicken Lasagna
I was lazy and tossed this w/ pasta and baked it. I did make the alfredo from scratch. I added sun-dried tomato and garlic to the alfredo and blended. I had two andouille sausage links in the freezer that I used. It would be good w/ shrimp added to or instead of the chicken. I will make again for sure!
