Never Fail Pie Crust II

I think it took as long to "pat" this into the pie pan as it would have to roll it out. The crust was very thick and dense. I didn't even use the whole amount.

Libby's® Pumpkin Cranberry Bread

This was so good!! I made one large loaf and 3 mini loafs with the recipe. My changes: used half applesauce in place of oil, used one cup whole wheat flour in place of white, and I cut the sugar by almost a cup. I plan to add more cranberries next time. We loved it!

Garbanzo Tomato Pasta Soup

This was very good. I used very little onion as a personal preference and added more pasta. I also used Italian seasoning and basil as my spices. Finally, I let it simmer for a few minutes to infuse the flavors, and it was very flavorful. Very easy!

Pumpkin Dip

This was great! It does make a lot though. Some people mentioned it being lumpy...I softened my cream cheese pretty well and sifted the confectioners' sugar, and it was super smooth.

This was so good! I used fresh parsley and added a little rosemary and thyme. I also used one zucchini and one squash but stuck to the recipe otherwise. We loved it!

Roasted Red Pepper Soup

This soup was great! It would be great as just a plain soup too. I roasted my own red peppers, and guessed by using 4. It wasn't nearly enough, so I reduced the other ingredients. I'd probably try 7 peppers next time. I'll definitely make it again.

Pumpkin Flax Quickbread

This was pretty good. It was a bit chewy though. I was a tiny bit short on pumpkin, so I added a little extra applesauce. I'm not sure if that would make a difference. Other than that, I used regular whole wheat flour. It's not as good as a 'fatter' version, but it is definitely healthier!

Pumpkin Chocolate Dessert Cake

This was pretty good. Kind of a strange taste, but lots of people enjoyed it. I used 2/3 c wheat flour in place of white and used Smart Balance in the icing because I ran out of butter.

Fruit Pizza I

This was great. I added Cool Whip in the cream cheese mixture to make it lighter, and the total was more than enough to make two pizzas. It doesn't save very well - we refrigerated the extra of the second pizza, but the sugar cookie part got pretty soft.

Orange Cake

This is very tasty! I used vanilla pudding and orange extract. I tried it the second time with applesauce instead of oil, but it wasn't quite as good. I have an orange cake mix that I'm excited to use next time. I made the glaze and tried the 'poke holes in the bottom of the cake' thing, and it was ok. It's kind of frustrating and messy. I think a little bit more of an icing-type glaze would be best.

Blueberry Pie

This was great! I added 1 extra tbsp of cornstarch. I waited over an hour to cut it, but those two pieces didn't hold together. Once it had cooled, and I refrigerated it, it held together fine.

Pizza On The Grill I

We loved this! The dough wasn't hard to make -my husband was so proud because he got it started himself. I roasted a red pepper and used a good bit of it. I thought the recipe called for too little red pepper. It was helpful to have both of us helping put the toppings on at the grill. We think it's the best homemade pizza we've had, and we'll definitely make it again!

Easy Platz (Coffee Cake)
