Basil Vinaigrette Dressing

Great Grandma Johns' Pasties

This is a nice simple recipe. For a busy night shortcut, I used the Pillsbury pie crusts, and serve with Heinz jar gravy. You can whip them up pretty quickly and pop them in the oven.

Italian Breaded Pork Chops

Good, but not great. I usually use Italian breadcrumbs when I cook, so they did not add a special flavor for us. These were just baked, breaded chops.

Penne with Spicy Vodka Tomato Cream Sauce

This is a good compromise dish for us, in that I love a cream sauce and the rest of the family likes a red sauce. It's not something we have often, but it get's solid good marks when we do have.

Succulent Grilled Hickory Pork Chops

It's not an overwhelming flavor, but it is a good flavor. Absolutely need the hickory chips/charcoal. Chops were juicy and tender.

Portobello Penne Pasta Casserole

Not bad. Did not really care for the soy flavor. Next time will use balsamic vinegar instead, add roasted red peppers, a little pepper jack, and maybe some Italian sausage. I think the sauce needs to simmer longer in order to meld the flavors. I'd have a bite with a strong soy taste, then one with flour, then one with cheese.

Juicy Roasted Chicken

Good, but not great. Rather bland in the flavor department, albeit very juicy. Made a hellacious mess in my oven, with the margarine splatter. Will attempt again with less margarine, and way more spices.

Steak Pie

Good. Kind of like a stew with pastry on top. A solid foundation from which to tweak with your own style. Next time, I will dice the meat smaller (used London Broil, subbed red wine for the water and herbs de provence), will eliminate the egg wash on the pastry as this seemed to prevent the pastry from puffing. Will add veggies to taste.

My Crab Cakes

Delish. Followed the advice of others and doubled the crab. Eliminated the crackers and added the flour/bking. powder/sherry combo previously recommended. Refrigerated after combining. Fried in cast iron skillet. They are soft when first placed in skillet, but they do hold together.

Chicken Breasts with Balsamic Vinegar and Garlic

Not a favorite. Actually tasted rather bland with a slight hint of sweetness that was unpleasant. Trying to figure out what to do with the leftovers - of which there are quite a bit.

Swiss Chicken Casserole I

A solid go-to meal after a long day. One pan, no muss, no fuss. I usually add a little white wine to the soup can to clean out the leftover, and add a little something more to the sauce.

Apple Walnut Salad with Cranberry Vinaigrette

Apple Cole Slaw

Quite good. The ratio of apples to slaw was a little high, will add more slaw next time. Added toasted walnuts, craisins and raisins. Used the lemon juice to toss the apples (julienne) added cider vinegar to the dressing. Had to add more cider and mayo to make enough (we prefer our slaw moist). Big hit with the kids, hubby frowned until he had a taste.

Lamb Chops with Balsamic Reduction

Due to the length of time to reduce the sauce, the chops continued to cook past medium, while holding, and ended up served medium well. Prepared in a cast iron skillet. The taste was great. Next time will sear in skillet and remove, then prepare sauce.

Country Fried Steak and Milk Gravy

Quite good. Prepared with Crisco in a cast iron skillet, adding spices as noted by other reviewers. Had to add an additional 1/4 c. of Crisco to prevent burning, and to garner enough drippings for gravy. Still came out short on gravy. Will make again, with more gravy.
