I'm an empty-nest mom and wife who is enjoying time with her hubby again. We are 50+ and enjoying a slower pace life as we are semi-retired. We moved to a lake and I am enjoying being home more and expanding my hobbies in areas like cooking, crafts and reading.
My favorite things to cook
I enjoy trying new recipes and try to keep my meals light and healthy. Desserts (especially chocolate) are always a favorite.
My favorite family cooking traditions
A few favorites are chicken pot pie, Christmas/Easter morning casserole and coffeecake, and layered dip. We all recently discovered coconut prawns so a new favorite has been added to the menu.
My cooking triumphs
Now that I'm home more I am having a lot of fun trying new recipes and cooking techniques. I've tried ingredients I'd never even heard of before and discovering that I AM a very good cook! Allrecipes.com has been a very valuable tool for me and is the first place I go to find a new recipe.
My cooking tragedies
My first attempt at a rotisserie chicken on the barbecue resulted in a large fire in the drip pan and a very blackened chicken! I refused to give up and the next night had a wonderfully juicy chicken for dinner. The trick I needed was to add an inch of water to the drip pan and to turn the heat down a little lower. Be sure to try the Rotisserie Chicken recipe on this site. It's fantastic!

Zucchini Cornbread Casserole
I salted and then squeezed water out of the zucchini before mixing the ingredients together and it turned out great. All our guests thought it was very good.

Mom's Zucchini Bread
Excellent! I also replaced 1/2 the oil with applesauce but otherwise followed the recipe. Hubby and I both loved it!

Butternut Squash Soup
Fantastic. Hubby and I agree it is the best soup we have ever had. I made it just like the recipe except used 1 brick of cream cheese (Neufchatel for 1/3 the fat) instead of 2.
